Uncle Billy’s & Christine Celis Gypsy Collaboration – Christine Celis is now with 78704 brewpub Uncle Billy’s and her latest Gypsy collaboration is very unique stylistically: a cold brew coffee-infused Belgian Dubbel Porter. While that combo may sound like it could be confusing, Christine & Trevor from UB’s actually pull it off incredibly well. Founders Black Rye – This beer will surprise you with a big hop flavor and a toasty sweet aroma. Pours black from the chocolate and de-bitterized black rye malts. Saint Arnold Divine Reserve #15 Imperial Stout – DR15 has a rich malty body full of coffee and chocolate flavors and a spiciness derived from the combination hops and high alcohol. It was brewed with a variety of malts including 2 row pale, crystal, chocolate and roasted barley. Texas Keeper Cider Weizen – The goal with TX Keeper’s latest release Ciderweizen was to marry the underlying pear and green apple notes from the Crispin and lemon-grapefruit of the Goldrush apples to the floral and spicied notes of old world Wit Beers and German style Hefeweizens. Ciderweizen is dry hopped, unfiltered, finished with a lively effervescence, and naturally gluten free. Notes of lemon, pear, coriander, cloves, hallertau hops with lingering orange peel on the finish. 7.3% ABV/Austin, TX

Ranger Creek Bourbon Barrel Imperial Brown* – Arriving Friday is the first release in Ranger Creek’s new bourbon barrel program. This Imperial Brown ale boasts loads of sweet caramel and toffee notes balanced with roasted malts and a rich creaminess. After maturing in first-fill bourbon barrels, the base beer has taken on some undertones of vanilla, earthy tobacco and an alcohol warmth. Sixpoint Beast Mode Porter – Beast moooooode! Jody is a big Seahawks fan so naturally this will be the go-to Sunday beer for the big game. Beast Mode pours chocolate lab with ruby highlights. The nose is downright beastly – coffee, roast, hops, caramel. The texture is medium bodied with roasted bitterness upfront on the tongue, followed by sweet toffee and malt on the tail end. Avery Maharaja – The king of Avery’s IPAs. An imperial IPA that tips the scales at 10.2% and 102 IBU, this particular bottle run was bottled not even 2 weeks ago! That’s as fresh as it gets, and this one will be excellent for months to come being this high ABV. Simcoe, Centennial, Cascade & Chinook hops. 10.2 ABV/Boulder, CO/Ratebeer 100

Elevation Bourbon Barrel Oil Man* – This winter seasonal from Elevation in Colorado pours a deep black with a tantalizing off-white head. Aromatics of sweet malt and bourbon envelope the nose like the sunset of the eastern plains. The malt profile continues through the palate from beginning to end with subtle hints of chocolate, coffee, and of course bourbon. Elevation Senorita Horchata-Style Porter* – This beer pours a deep dark brown with a snow-white head. Aroma notes of vanilla, cinnamon, and sweet milk hit the nose bringing up images of the delicious Mexican drink this beer is styled after. The beer hits the palate with vanilla, sweet chocolate malts, and a hint of cinnamon; all with a medium body and good balancing hop bitterness. 8.4% ABV/Poncha Springs, CO/Ratebeer 91  *Arriving Friday

5 Stones Heavens to Murgatroid – Seth Weatherly of 5 Stones is back at it again with his latest release – a wheat ale brewed with Texas prickly pear tuna. It pours a light shade of pink with a prominent prickly pear flavor. 6.2% ABV/Cibolo, TX/No ratings yet

Odell Cutthroat Porter – Not quite a stout but definitely no lightweight, Cutthroat Porter is smooth and robust. Inspired by the classic London porters, Odell uses dark roasted malts to create a deep rich color and flavor that hint at chocolate and coffee. 5% ABV/Fort Collins, CO/Ratebeer 94

Odell Fernet Barrel Aged Porter – Odell collected barrels from Leopold Bros distillery whose Fernet includes lavender, honeysuckle, ginger root, bitter aloe, dandelion root, rose petals, chamomile, and pepper. Inspired by the herb & spice flavors of this dark minty liqueur, they then filled the barrels with a rich porter. The roasty chocolate malt character is infused with hints of mint and licorice from the herb-soaked oak, creating a decadent flavor and aroma. Malka Blonde – We’ve enjoyed the Israeli Malka Brewery’s dry Irish Stout so we figured we’d give the blonde ale a shot. It’s a Belgian pale ale characterized by notes of citrus as a result of the addition of orange peel and coriander seeds to the brewing process and the use of special hops.  6.5% ABV/Yehiam, Israel

Buffalo Bayou Red Velvet Stout – Modeled after a red velvet cupcake, the latest from Buffalo Bayou is richly decadent. Surprisingly not very sweet; it finishes much drier than expected. 6.3% ABV/Houston, TX/Beer Advocate 84

Full Sail Wheatwine – Full Sail’s 27th Anniversary Wheatwine is brewed in the Barleywine style, but contains no barley malt, instead, it is mashed and brewed with 100% Wheat Malt. The beer has a rich golden hue and is brewed with Wheat and CaraWheat Malts and hopped with a blend of UK and NW hops. Complex aromas of apricot, spice, and citrus lead to a smooth palate, blended with notes of caramel, marmalade, and green hop overtones. 9.5% ABV/Hood River, OR/No ratings yet

Avery Collaboration not Litigation – A collaboration between Avery & Russian River Brewing out of California. A decade ago both breweries realized they had a beer called Salvation in their lineup. Woodchuck Hopsation – First of the Woodchuck Cellar Series, this cider is an infusion of cider with crisp citrus and pine notes. Enjoy the smooth apple character of Woodchuck’s signature hard cider perfectly balanced against the bitterness of hops. 6.9% ABV/Middlebury, VT

Our friends at Thirsty Planet have been saying for eternity that they plan on bottling their beers and that day is finally here! Thirsty Goat amber ale is the first of the lineup to be bottled and it’s currently in stock. Tyrell from the brewery will be by the shop during our Friday evening tasting this week to meet customers and help support the launch.

Hops & Grain Greenhouse – H&G Greenhouse #12 is in stock! Our favorite rotating IPA series is back again, this time with a sumptuous blend of Cascade, Centennial, Chinook, Mosaic, Amarillo, Hersbrucker, Nugget, Meridian and Wakatu. The H&G folks each picked their favorite from the Greenhouse series so #12 showcases all of their favorite hops in one beer.

Clown Shoes The Peace That Money Can’t Buy – Clown Shoes is five years old! This bourbon barrel aged Belgian Style Quadrupel Ale commemorates their anniversary. You’ll get the nice dark fruit flavors and esters from the Belgian yeast strain but also a bit of caramel, oak & heat from the bourbon barrels. 11.5% ABV/Ipswich, MA/Beer Advocate 90

Odell Runoff Red IPA – Dank tropical fruit with a zesty, piney green underpinning. Very interesting hop profile that leaves a lively lemon/citrus prickliness on the palate, but is also balanced by earthy flavors.  6.5% ABV/Fort Collins, CO/Ratebeer 96

Solid Rock Trinity Vanilla Milk Stout – The milk stout was very popular in the United States prior to World War II. It uses lactose sugar to add a smooth, mellow sweetness to the beer. Solid Rock’s version was crafted using brown, chocolate, and coffee specialty malts to create a subtle nutty, chocolate sense with a coffee undertone. A hint of pure vanilla is added late in the fermentation stage to tease the senses and round out a touch of vanilla sweetness. 5% ABV/Spicewood, TX/No ratings yet

Odell Lugene Chocolate Milk Stout – Made with lactose and milk chocolate, the aroma is of oatmeal, chocolate and malt. Taste is quite similar with some raisin taste. A perfect dessert beer. 8.5% ABV/Fort Collins, CO/Ratebeer 98

Ducato Chrysopolis* – To add to the crazy sour lineup from Ducato in Italy (PS – Beersel Mattina back in stock – arriving Friday!), the Chrysopolis is a gueuze with a nice lactic sourness. Cedar Creek Fisticuffs Barley Wine* – The newest seasonal release from Cedar Creek is their Fisticuffs Barley Wine. I’m having trouble finding any info on it, so just suffice to say that’s it’s the newest release!

Sierra Nevada Bigfoot Sierra Nevada Bigfoot is an award winning example of the English Barley Wine style. It boasts a dense, fruity bouquet, an extremely rich, intense, bittersweet palate; and a deep, reddish-brown color. This ale is superbly balanced between an almost overpowering maltiness and a wonderfully bittersweet hoppiness. Will cellar exceptionally well! Southern Tier Grand Arbor – Aromatically earthy with distinct fruity esters and low to moderate noble hop character. Balanced fruity character blends into crisp biscuit notes with a dry tart finish. Southern Tier Crème Brulee – The latest release in the Southern Tier Blackwater series is the crème brulee, arguably the sweetest of the 4 annual releases in this series. It tastes exactly as it’s named. Syrupy sweet but goes down ridiculously easy for 9.6% ABV. Lakewood, NY/Ratebeer 98
