New Draft Beers This Week

(On-Premise Consumption or Off-Premise Crowlers)

Real Ale Hans Pils You might say, a great beer is man’s other best friend. So when we made this German-style pilsner, it just made sense to name it after the brewery’s dog, Hans — our owner’s German Shorthair Pointer. Inspired by the pilsner beers of Northern Germany, Hans is crisp, brightly hoppy and full of flavor. At 50 IBUs and featuring Tettnang hops, it’s even hoppier than many pale ales. The German malt helps create a nice pale golden color and provides the perfect companion to the hops. 5% ABV

False Idol Banquet BoySimply brewed with 100% Texas Water. Texas’ Fine Light Beer. For the Banquet Boys & Girls of the world! 5.6% ABV

False Idol Mr Early BirdEarl Grey Saison. Join Earl in the 87 roof top, Bronson Whipping hoopties. Don’t forget your Sweatshirt. 6%ABV

Tucher Dunkles HefeA Bavarian specialty of dark colored, top fermented yeast beer with typical yeast cloudiness.

Its unmistakable and well balanced taste is due to an excellent choice of dark aromatic malt and goes very well with traditional Bavarian dishes. 5.2%ABV

Bluebonnet MarzenSmooth and clean with a deeply complex malt character, this classic lager style has a beautiful orange hue topped by a thick white foamy head. 5.1%ABV

Equal Parts Dot MatrixThis particular recipe was developed when we were homebrewing years ago, and we always brewed it during the winter months as a nice alternative for the (rare) times when we weren’t feeling like drinking heavier stouts. Dot Matrix is smooth on the palate, soul lifting, and finishes dry with hints of malt, toffee, and chocolate. 5.2% ABV

B-52 I Thought You Said WeastWe started in Conroe, went 10,000 paces due Weast and this is the beer we found. Double dry hopped with Lotus for flavors of pineapple creamsicle with a malty backbone of crystal wheat for full mouthfeel with a crisp bitter finish. 6.5%ABV

Dutchess AvalonAvalon IPA takes inspiration from our favorite approaches to the modern IPA from both sides of the Atlantic to the West Coast. Brewed with Golden Promise & Pilsner malts with a dash of wheat and oat malt, Avalon manages to provide the generous mouthfeel of an East Coast IPA with some solid West Coast structure and a Dutchess Ales must; classic British balance. Hopped with an array of expressions from El Dorado, Summit & Palisade, – Avalon shows nectarine, apricot, juicy citrus, woodsy meadow flowers & just a hint of something tropical. Overall it’s a rewardingly lush yet refreshing and nuanced drinking experience. 5.8% ABV

Zilker Vibe Worthy HazeBrewed in collaboration with our Hazy Homies at Turning Point Beer, this triple IPA is hopped four different ways. Best characterized as bright citrus tropical juice without the edge you would expect from 11% ABV

Family Business Sun JuiceLiquid sunshine in a glass. Silky Cashmere hops woven with doses of Citra and Cryo Simcoe add up to a punchy but smooth and friendly IPA with notes of tangerine, strawberry candy, stone fruit, and sweet spice. 5.8% ABV

Martin House Astronaut ApocalypseAstronaut Apocalypse 12% – Imperial Stout with Coconut. If there’s one thing we love doing more than fruited sours, it’s brewing up these big, boozy, roasty, chocolate stouts. Astronaut Apocalypse is a thick imperial stout brewed with flaked coconut.

New Wines This Week

(On-Premise Consumption or Off-Premise To Go)

Bikicki, Nadia Serbian Rose 2018 – Cheerful and refreshing scent of small red fruits, with lots of raspberries and redcurrants and a fine spicy-peppery flair. There is also a soft, rustic tone reminiscent of antique sweets and cotton candy. Moderately full, soft, with a fine structure and a little powdery tannins. The finish brings notes of red plum and ripe, sweet cherries. Serbian Rose, Spontaneously fermented in stainless steel tanks. 100% Pinot noir. 14.5%ABV

Grand Vin de Barnag Carbonet Cab Franc 2020 – Who would have thought that a wine bar in Berlin would create new winemakers? When Bence Szilágyi first started working in wine bars in Budapest, he did not know yet of the world of natural wines, but around 2015 discovered them during a trip to Berlin at Jaja. Following this initial discovery, he visited more winemakers around Europe and, in 2017, started making his first vintage together with friends. The grapes came from his dad’s hobby vineyard, which he farms organically. Together with one hectare, they get from neighbors, they have around three hectares. Also, the 200-year old cellar is below the family house. So last year, they started leaving Sulphur out of the equation and plan to continue growing with an old barn waiting to become the new winery.

How did Cabernet Franc get to Hungary? Usually a popular grape for Bordeaux-style wines. Our guess is because everybody in the 90s wanted to make this style of wine. Fortunately, Bence had different plans for this grape. He switched to carbonic maceration, a kind of fermentation where grapes ferment without oxygen in whole bunches. This brings out the fruitiness and makes them more stable without any additives. After 10 days, they were mechanically pressed and aged in old Hungarian oak barrels for another 10 months. It greets with loads of red berries and pepper. In the mouth are sour cherries, light tobacco, and silky tannins. Bence says you should drink it cool and with no food. I think the well-integrated acidity makes it a perfect food companion with sugo and pasta or maybe even a Hungarian Goulash.

Swick Wyd?, Chardonnay 2020 – 100% Chardonnay. Conley Vineyard, Yakima, WA. Certified Organic. Chenin-esque, spiced pear, tropical aromas, reminiscent of Sonoma Coast Chardonnay, on the palate it’s dry and acid driven, ripe; on the palate dry and fresh. ABV: 12.8%

Large Soif Blanc AOC Anjou Blanc 2019 – This lovely harmonious white is a blend of 2 great grapes, Chenin Blanc and Chardonnay, grown on the shale soils of the deep Anjou. Biodynamically treated, they are fermented with their own native yeast together in stainless steel, then aged 14 months on their lees before being bottled, unfined, unfiltered and lightly sulfured.
It offers lovely white flower, light quince, sweet yellow apples notes on a medium fat frame that ends with a crystal mineral, long finish. They jokingly call it an homage to French Chef Paul Bocuse, whose insistence on quality and freshness inspired their tastes in both food and wine. It is certainly a versatile wine for the table, but we also enjoyed it nicely chilled on its own.

Large Soif Rouge Red Blend France 2019 – Cabernet franc (40%), cabernet sauvignon (35%), gamay (25%). The spirit of this cuvée is to make an excellent thirst-quenching, gourmet wine! The nose is rich in fruit, the three grape varieties complement each other perfectly. On the palate, the Gamay softens the structure of the two Cabernets, the tannins are already melted to leave us with an astonishingly fresh finish! 13.38% ABV

Le Petit Barriot Blanc 2019 – WHY IS THIS A UNICORN?  This is pure Syrah, but instead of the expected claret red color, it is as crystal clear as an alpine stream…Syrah vinified white!

Marc Barriot came to wine later in life but once he found it, he jumped in the deep end. His journey to starting Clot de l’Origine led him to Australia, the US, and all over France. After apprenticing in Bandol for four years he scooted southwest around the Mediterranean coast to the town of Maury in the Roussillon, finally finding a plot of land and a place he could settle down. He started with just one vineyard with old vines, but now has 17 in total, all farmed organically from the very beginning. Nothing else is added in the winemaking process except a tiny amount of sulfur. Marc had been making his entry level ‘Le P’tit Barriot’ into an inky red, chewy and well-loved red wine but just a couple years ago shifted gears and turned some of the production into a blanc de noir – or a white wine made from red grapes. Winemaking precision is required for little tricks like this! – the grapes must be pressed directly and spend as little contact with the skins as possible, so they don’t pick up any color. Since he doesn’t filter or add anything else to the wine, Marc had to be even more on it to make this work. And it does! It is tart, and red-fruited, but crystalline, as if the essence of Syrah was distilled into a snowflake.  Super delicious and intellectual, guaranteed to impress your wine geek friends…

Equilibrium Energy Equals – Energy Equals is a companion beer to MC². It completes the equation. We start with MC² as a base and incorporate the well received process we like to refer to as the ‘Energy Dry Hop’ which gives this beer an intense brightness and flavor. Energy Equals has enhanced flavor characteristics of mango, pineapple, citrus, and apricot. With the new technique in place, we notice a much deeper flavor profile while being extremely bright and lighter in body. It’s extremely crushable with our EQ juice finish 8%ABV

Equilibrium Fractal HBC 586/ Citra – A fractal is something simple at the core yet can produce wonderful and amazingly complex results. We use the fractal series to investigate how different hops manifest through our processes, allowing us to optimize both our use of hops and our hopping techniques. Starting off with a simple grain bill, our newest Fractal investigates the interplay between one of the newest hop varietals, HBC586 and our hand selected Citra. Fractal HBC 586/ Citra pours a vibrant yellow releasing complex  aromas and flavors of mango, green grapes, dank grass, passionfruit, and earth. The taste follows the aroma with a resinous creamy mouthfeel and a firm but rounded bitterness. 6.8%ABV

Equilibrium Hop Wave – Hop Wave 5 takes one of our favorite Citra/Galaxy DIPAs, dHop5, supersizes the hop charge and adds a touch of lactose. Aside from all the great things about this beer, it includes an experiment to boost the citrus character of its aroma. We will continue to apply this to the next several releases for evaluation but we’re very pleased with the effect.

Hop Wave 5 pours a milky straw yellow releasing pungent aromas of citrus, pineapple, passion fruit, and peach all integrated with a sorbet twist. The taste is a soft and bright creamy tropical flavor that is dangerously drinkable and balanced. 8.5%ABV

Equilibrium Sparc – SPARC Fruit Fusion Blackberry/Raspberry pours a completely opaque deep fuchsia topped with a fluffy light purple crown of foam. Double raspberry and blackberry juice with a wheat core morph into liquid handfuls of fresh berries and jam. After the intense and decisive aroma, the mixed berry flavor leads into a luscious light and effervescent fruited seltzer mouthfeel with a low and #BalancedAcidity, which combined with the low ABV of 4.5% makes this an all-day crusher to give you that clean energy to fuel your day!

Fair State You Can Have The Crown – A huge, imposing Imperial Stout, but just the beer part. No extra candy or pastry here, just a mountain of malts. We mashed twice as much, and boiled three times as long, and the resultant beer is luxuriantly chewy, chocolatey, mildly roasty, and delightful all on its own. 12.4%ABV

Hopewell Brewing First Pils – First Pils is the first beer ever brewed by Hopewell and, fittingly, the one we reach for most often. A Pilsner-style Lager with a bready malt profile and a snappy noble hop finish. Tastes great anytime—but best with friends. 5.1%ABV

Dutchess Ales Avalon IPA – Avalon IPA takes inspiration from our favorite approaches to the modern IPA from both sides of the Atlantic to the West Coast. 5.8% ABV

512 Bruin – At once cuddly and ferocious, (512) BRUIN combines a smooth, rich maltiness and mahogany color with a solid hop backbone and stealthy 7.6% alcohol. Made with Organic 2 Row and Munich malts, plus Chocolate and Crystal malts, domestic hops, and a touch of molasses, this brew has notes of raisins, dark sugars, and cocoa, and pairs perfectly with food and the crisp fall air.

512 Whiskey Barrel Aged Double Pecan Porter – A “double” version of our signature flagship beer, Pecan Porter, this beer was aged for three months in freshly emptied Willett Bourbon barrels, where it developed strong notes of whiskey and hints of oak to compliment delicious flavors of pecan, vanilla, coffee and chocolate. 9.2 %ABV

Belching Beaver SD Besties– Neapolitan Imperial Milk Stout. We’ve always had a tight bond with @coronadobrewing, and we wanted to celebrate with a special collaboration. SD Besties is our take on a liquid Neapolitan treat with notes of strawberry, chocolate, and vanilla that you’ll want to share with your BFF. We hope when you drink this beer, you’ll think of simpler times when it was all about meeting up with your bestie for some DAMN GOOD TIMES. 8.5%ABV

Belching Beaver Sling Yer Hook – After 9 glorious years you’d think we’d run out of ideas for beers, but you’d be wrong. Our 9 Year Anniversary beer, a unique sipping brew with the distinctive nose of a well-crafted bourbon is silky smooth, like rich flowing caramel. We also added a pinch of salt to balance the roasted coffee notes and chocolate-like malt character of an Imperial Stout. It’s so good, you’ll tell anyone trying to get their grubby paws on it, “Sling Yer’ Hook!” 11%ABV

Independence Highboy Strata DIPA – Double IPA with Strata hops. 9%ABV

All the maple-y sweetness balanced with the roast of the dark malt finished off with just the right amount of coffee to make you want to fry up some eggs and pancakes to complete this breakfast inspired treat. Hops & Grain Zoe Lager – Zoe is brewed in a mildly traditional manner, very similar to many of the German lagers of the old world but dry-hopped to add an extra layer of complexity. This beer is based on pale and Vienna malts, light to golden in color with a beautiful white layer of foam resting on top, constantly delivering floral and citrus dry-hop aromatics with every sip. Zoe is meant to be paired with, well, life! With notes of lightly toasted bread, floral hops and an incredibly smooth finish we hope that Zoe is everything that you’ve been searching for in a pale lager. 5.1% ABV

Hops & Grain A Pale Mosaic – A Pale Mosaic is our American style IPA showcasing a fairly new hop variety called Mosaic. The beer begins with a base of German Pale Ale and Vienna malts, and is brewed for a light, crisp malt body. We use Oregon grown hops for bittering, targeting 45 IBU’s, and follow that up with a hefty whirlpool addition. Finally we dry-hop with Mosaic, Citra and Nugget to deliver a beer that is clean and complex with notes of pine resin, grapefruit pith and blueberries. 5.9%

Our second batch is Sour Blueberry Cobbler. Light and not too sweet, the blueberry flavor and aroma dominate as the cinnamon, vanilla, and salt build the filling and crust goodness. 5% ABV

Jest King Eezy Peel – We’re happy to introduce a new beer called EEZY PEEL — farmhouse ale refermented with mangoes! We find this beer simple, fun, highly drinkable, and really enjoyable. It’s quickly emerged as a staff favorite here at Jester King.

EEZY PEEL is a farmhouse ale brewed with well water, TexMalt Llano Pilsner, Denton County Wheat Malt, and a touch of raw wheat. We kettle hopped it with Organic Golding from The Oregon Hophouse for about 18 IBUs. Around this mark, we find the acidity from fermentation and the fruit creates a harmonious, well-integrated soft, drinkable tanginess. After primary fermentation in stainless steel with our mixed culture, we re-fermented with fresh/frozen mangoes at a ratio of two pounds per gallon. While this sounds like a lot of fruit (and it is), the result is a really dry, drinkable, quenching fruit beer, which again has been one of our go-to’s lately. 7.2% abv

Stem Cider Lava Flow – A strawberry and pineapple explosion inspired by the Hawaiian Islands. Off-dry. 5.8% ABV

Stem Cider A Salted Cucumber – Dry hopped with cascade and citra hops, finished with fresh cucumber and sea salt. 6.7% ABV6

Stem Ciders Rosé Cider – A blend of cider and red wine. Light, balanced acidity, tannic. Off-dry. 5.5% ABV

Upland TBK S’mores – We made a S’Mores TBK a few years back and it was good, but we knew we could do even better. This year we applied all that we learned from last attempt and went all out. This beer has a modified grain bill, lactose and cinnamon to help accentuate graham, marshmallow, and chocolate flavors. But we didn’t stop there! We aged this beer on a mountain of cacao nibs, then let it marinate in fresh Bourbon barrels. After months of barrel aging, we added real vanilla beans, more cinnamon chips, and even more chocolate to give it loads of S’Mores flavor. Even though we have added a ton of extra ingredients, S’Mores TBK still allows the base beer flavor to be respectfully present. This ain’t no pastry stout. We tried hard to balance all the extra flavors while being true to the Teddy Bear Kisses flavor. 11% ABV

Upland Teddy Bear Kisses – A dark and robust beer brewed in the traditional stout method and featuring an abundance of dark malts and high alpha hops for a powerful impact of roast, chocolate, and sweet bitterness. The lucky few who cuddle up to Teddy Bear Kisses can sense the velvety malt character, balanced bitter intensity, and soothing chocolate notes created by long aging on fair trade cacao. Teddy Bear Kisses will make you feel warm and happy inside, but it’s definitely not your childhood cuddle toy. Teddy Bear Kisses won a Gold Medal in the 2010 World Beer Championships. 10% ABV

Alaskan 35th Anniversary – This complex and malt forward Imperial Stout is brewed with an array of local ingredients and flavors to add dimension and celebrate Alaskan’s history and home. Alaska birch syrup from Kahiltna Birchworks lends a deep, almost tart character to the dark malt profile, while wildflower honey adds a delicate sweetness and floral notes to the aroma and finish. The slight addition of our in-house alder-smoked malt alludes to the distinctive roasted flavor of turn-of-the-century malting practices, without overpowering the more subtle flavors of this dynamic anniversary brew. 9% ABV

Dogfish Where the Wild Hops Are – Celebrating the magic at the intersection of art and ales, our annual Off-Centered Art Series is a chance for our brewers to take a walk on the wild side and with our latest innovation, that’s precisely what they did with ‘Where the Wild Hops Are!’

This unfiltered, rustic IPA is brewed with four wild-derived hop varieties that include Zappa, Amarillo, Comet and Sabro. It’s then blended with a touch of barrel-aged wild ale that’s been aged for four years in French Oak barrels.

The result is a complex blend of citrus meets dank, that’s rounded out by a touch of wild. With each sip, you’ll be greeted by dry, oak-tinged finish. 6.5% ABV

Sierra Nevada Bigfoot 2022– Bigfoot is a beast of a beer, packed with bittersweet malt and heaps of aggressive whole-cone Pacific Northwest hops. First introduced in the winter of 1983, Bigfoot is a cult-classic brewed in the barleywine style—strong and robust with the refined intensity of a wine. Bigfoot is prized by beer collectors for aging in cellars. Under the proper conditions, it can develop enticing new flavors and character as it matures in the bottle. Each new release or “expedition” is vintage dated. 9.6% ABV

Martin House Blood Orange Imperial Salty Lady – Fruited Imperial Gose. 9.2%ABV

3 Nations El Rey – A stout fit for the King himself. Savor the complex layers of flavor in our Imperial Milk Stout with Mexican chocolate, coffee, peanut butter, and bananas. Contains Lactose. 8.3%ABV

Symbol Red Velvet – The Midas Star is a symbol for abundance and prosperity. Like the cake that inspired it, Red Velvet Imperial Golden Stout is a rich deep red color with an abundance of velvety rich chocolate, and the added notes of a tart, yet creamy frosting. Contains Lactose. 11%ABV

Ingenious Smarty Double Peach – Tart Berliner conditioned on peaches and white peaches. 6.8% ABV

Fairweather Cider City Country – Wild Apples from a single orchard. Earthy, slightly tart, crazy drinkable. 6.0%

Saint Arnold Texas Winter IPA – An American IPA brewed with Texas grapefruit, this beer features tropical and citrus notes from Galaxy, Columbus, Simcoe, and Cascade hops. A mild caramel sweetness in the malt body provides balance, but lets hops shine. 7.1%ABV

Rogue Knuckle Buster– At Rogue, we are always working on new ideas that break from the norm; this collaboration is no different. Our friends at Revival Cycles in Austin, Texas also like to push the envelope with their hand built motorcycles, so teaming up on a new style of IPA that uses a cold fermentation technique just made sense.

Like a cross between a pilsner and an IPA, this beer opens with a delightful floral hop aroma that is followed by more hops, cracker, bread, and a soft sweetness across a very light body. The finish is crisp and refreshing with a nice bit. 6.1% ABV

Austin Beerworks Pasteur – FRENCH-style Lager. Typically overshadowed by their grapes and snails, the French also grow très magnifique beer ingredients.

Named after Louis Pasteur, the French scientist who is credited as the first person to understand the importance of yeast in the production of beer, this unfiltered lager features barley and hops from the Alsace region of France. It is fantastically drinkable, with classic European lager characteristics of sweet, bready malts and floral Noble hops. 4.7%ABV

Clown Shoes Snow on the Maple Tree – Stout aged in maple bourbon barrels. 2021 variant 10.1% ABV

New Wines This Week

(On-Premise Consumption or Off-Premise To Go)

Peaux Rouges San Jose Rosé – Created ex nihilo at the dawn of 2017, Peaux Rouges lodges itself in the woods somewhat hidden from Monthou sur Cher, Loir et Cher. A micro production of bottles, highly drinkable and thirst quenching without embellishment nor artifice. Half-Loire, half-Ardèche, but all vinified in the 41, the vintages here are well treated – because less is more, even for organic – with no added sulphur (except for one, for the wine grower got scared of his own shadow, it happens sometimes when one lingers too much in the woods). Never in a hurry, one watches out for the grapes first, then awaits the wine, for it takes its own time. When it’s ready, the wine is bottled by gravity, and then, one must wait a little longer, or not at all, it depends. ’Cause in the end, wine’s the boss!

Tasting notes: unfiltered, lively texture, notes of citrus/honey/flowers, pool party and patio friendly.

13.5% ABV

Echo Bay Synoptic Red Blend – When the Kenyon’s bought the property in 1967, the former owners had torn out an aging apple orchard and the land was left fallow. In 1978, they planted alfalfa first and a mixture of grasses to raise a few cattle and chickens. A large house was built in 1989 with an apartment on top for them and communal living quarters for the family below. Their 4 children (3 sons + 1 daughter) and their grandchildren would spend the summers here and commute to work.

In 2013 their daughter Kathy and her husband Mark Rufiange felt that they had the time and energy to plant a vineyard in their retirement, and her brothers supported them. Kathy and Mark’s daughter, Kelsey, took a keen interest. Kelsey graduated from Lincoln’s Viticulture and Oenology program and has worked in vineyards and wineries in New Zealand, Sonoma, and Australia before returning to Echo Bay full-time working both the vineyard and winery.

Brr! It’s cold in here…

There must be some new beers dropping in the shop ya’ hear! We sure are feeling the cheer here at the store this holiday season. If you find yourself not into the merriment, I bet one of these new products will do the trick.

Our timing with this week’s draft selection could not have been better. Just as those chilly breezes blew in, we put on Meanwhiles Winter Warmer. With a very deceptive 8%, I’m getting toasty notes of cinnamon & allspice with a touch of orange peel. It’s as close an approximation to an old fashion we can sell. For those hop heads be sure to check out the all El Dorado hopped Zythophile from Lone Pint. It’s got some pretty lush tangerine notes on the nose but is fully balanced with a dank hoppy resinous quality. On the light side, I’ve been crushin’ on the lagers and pilsners from Roughhouse… and their Pasternak Polish Pils doesn’t disappoint. Crisp. Balanced. Refreshing. I could drink this beer ALL the time! One last little nugget, rumor has it that we’ll have a quad on nitro by the end of the weekend.

If you’re looking to wine down this holiday season, I’ll highlight two new options dropping this week. First off, we were lucky to get our hands on an allocation of Margins Pinot Noir. This is the fresh, light on its toes Pinot you didn’t know you were missing. Guaranteed to put a smile on your face. If you fancy yourself the belle of the ball, then reach for a bottle of Serol Gamay Pét Nat. It’s silly, fun, and will give you life to go all night. This is party wine indeed.

Y’all next week is jam packed with events! Kicking things off on Thursday, we’re headed down under for some Jansz Tasmainian sparkling rosé and Shiraz from Yalumba vineyards. On Friday we have old vine Carignan from Les Lunes wines and a silly fun red Pét Nat from Populous. We’re purely stoked to have the folks from Independence Brewing out to hang Saturday from 4:30-7:30. Finally, to wrap up the end of the year, Martin House is stopping by for a pint night on the 30th.

For our Brewery of the month, we are happy to have the fine folks from Texas Beer Company filling our shelves. For JUST $8.99 a six pack we have their Pecos Amber, K9 Lager, and Hoppy Duck IPA.

Later, y’all.

New & Returning Beers & Ciders This Week

Firestone Walker Cinnamon Dolce Nitro– We reimagined our nitro milk stout into something entirely new and seasonal. Conditioned on whole Madagascar vanilla beans and cinnamon sticks, for a rich profile reminiscent of a cinnamon dolce latte. 6% ABV

Christian Drouin, Cider Pays d’Auge – 70% of the blend comes from bitter sweet and bitter apples, 20% comes from sweet apples, and 10% comes from acidic apples. Harvesting is carried out by shaking the trees. The fruit is then left in a loft above the press in order to ripen fully. Only mid season and late season apples may be used for the cider. If apples ripening in September were used, they would have to be mashed early in the year when the temperature is to warm for the production of good cider.” (Brewery Notes) 4.5%ABV

Live Oak Grodziskie -Piwo Grodziskie is a centuries old Polish beer style that ceased commercial production in the late 20th century. A decoction mash, 100% oak-smoked wheat malt, and noble Saaz hops join the traditional yeasts to bring this beer back to life in Texas.

A highly carbonated, low-alcohol beer with a clear, pale yellow to golden color, low to moderate levels of hop bitterness, and a moderate to medium-high smoky aroma and flavor. The bright, clear, and highly carbonated appearance of Grodziskie has caused the beer to be compared with Champagne, and it is sometimes referred to as “Polish Champagne” OG: 8ºP ABV: 3.0% IBU: 36

4th Tap Gingerbread House Party – A toasty amber with notes of biscuit, spicy ginger, nutmeg, and clove. 6.5% ABV

Champion ICBM Hazy DIPA – With a soft base of fluffy oats and wheat, and a massive double dry hop of Huell Melon, El Dorado, and Simcoe, this hazy DIPA is unbridled danger in a glass. Huge notes of honeydew melon, strawberry, candied pineapple, and sweet spruce crash the palate, unencumbered by bitterness. 10.0% ABV • 68 IBU DDH with Huell Melon, El Dorado, Simcoe

Fair Isle Ariana Farmhouse IPA – Ariana started with a soft, lean malt bill of Fritz Pilsner and Malted White Wheat from our friends at Skagit Valley Malting along with the second-use Mosaic hops from Bobbi. This set the stage for a dry-hop of the Hallertau Blanc and Ariana, drawing out fantastic notes of black currant, juicy red grapefruit, floral geranium, and slight hit of woody vanilla.

Whether you’re after a hoppy saison or a fruit-forward IPA, Ariana covers all the bases! We hope you love it as much as we do. 7.7% ABV

Fair Isle Eugene Farmhouse IPA – OBSCURING THE LINE BETWEEN IPAS AND SAISONS- Eugene is our saison impersonating an IPA and every batch uses second-use Mosaic Hops from Bobbi and dry-hopped with a different rotating hop. The current batch in our taproom is dry hopped with Nelson Sauvin. 7.5% ABV

Fair Isle Fay Fuller Saison – Eight weeks ago the good folks of Craft Canning came by and packaged our first ever can-conditioned saison, Fay Fuller. Named after the first known woman to climb Mount Rainier, Fay Fuller is our salute to all the women who have broken boundaries and summited mountains.

Fay Fuller is a dry saison with notes of grapefruit pith, mango and herbs. Fermented and conditioned for eight weeks with our house culture of wild and feral yeasts and bacteria. Unfiltered and naturally conditioned. 5.2% ABV

Fair Isle Franz Meredith Smoked Saison – A GRODZISKIE INSPIRED SAISON
Franz Meredith is a grodziskie inspired saison.  Brewed with 85% oak smoked wheat and 15% malted white wheat from Skagit Valley Malting and hopped with Strisselspalt and Hüll Melon. Franz has a soft smoke aroma followed by notes of melon and apricots.

A favorite style among our production team, we enjoy the playfulness of how palates adapt and evolve from the first sip to the end of the glass. The initial smoke bouquet gives way to bright citrus and floral notes begging you to enjoy another pint. 3.6% ABV

Fair Isle Ana Kiwi Saison – Ana is a tropical saison, kin to Cheri, and refermented on Ananasnaya Kiwi fruit from Red Cedar Farm in Poulsbo, WA.

Kiwi fruit, aka kiwi berries or kiwi grapes, are perhaps the Pacific Northwest’s best kept secret. The fruit is reminiscent of a Kiwi, but is the size of a large grape and has a smooth skin that is edible and packed with tropical flavors, even sweeter than a traditional Fuzzy Kiwi. The fruit is grown on Kiwi vines and thrives in the Pacific Northwest climate, yet it’s not widely available.

We hand crushed the ultra-ripe fruit, added it to the empty fermenter and allowed natural fermentation for 48 hours prior to adding the base beer on the fruit. This allowed for native microbes on the skin of the fruit to get a head start before our yeast culture took over – creating another layer of fermentation complexity. Ana then refermented for eight weeks on the fruit prior to being packaged.

The subtle mineral aroma of Ana is closely followed by notes of Pippin green apples, white grape skins, melon rind and bursts with tropical notes and bright acidity. Dry like our other saisons, but with a perceived sweetness coming from the kiwi, Ana stands apart. 7.4% ABV

Fair Isle Rachelle Rhubarb Saison – Rachelle is a saison aged in second-use gin casks from Copperworks Distilling Co. and refermented with fresh Washington grown rhubarb. Rachelle has a unique acidity from the rhubarb with notes of watermelon rind, vanilla and underlying layers of botanicals from the gin casks. Bright, effervescent and refreshing. 6.7% ABV

Fair Isle Gus Oak Aged Saison – While hop-forward beers and oak-aged beers may seem to be in different veins, we’ve particularly enjoyed how these elements play off one another in our saisons.

Perhaps you remember Jean-Michel, a release that was blended from puncheons and dry-hopped with French Barbe Rouge. The red fruit elements of the hop varietal and the vanillin present in the wood merged together to create an astounding note reminiscent of strawberry pound cake.

This convinced us to continue exploring this path in our oak program, and what led to Gus! Starting with a farmhouse ale base featuring Salish Blue wheat from Skagit Valley Malting, Gus completed primary fermentation in oak puncheons and continued to age for 7 months. A hearty dry-hop of flavorful Idaho Gem from Yakima Chief adds distinct notes of red currant, grapefruit, and raspberry to the soft, rounded base beer. Simple, elegant, and extremely drinkable.

Fair Isle Madame R Galle Saison – Inspired by saisons in the Wallonian region along the border of Belgium and France. Madame is a dry saison brewed with barley and wheat from Skagit Valley, setting a stage for our house yeast culture to thrive and produce notes of meyer lemon, apricots followed by a soft bitterness from German hops. 6.2% ABV

Fair Isle Waltrude Spelt Saison – Waltrude is a straw colored saison brewed with malted spelt grown in Eastern Washington and dry-hopped with Sterling hops from Crosby Farms in Oregon. Notes of lime zest and dandelion are followed by subtle acidity and a clean but vanishing finish.

Waltrude is the moment you step out of the tall evergreens and enter a meadow on a spring hike in the Pacific Northwest. Or for urban dwellers, entering your neighborhood nursery on that first warm weekend in Seattle. A nod to La Brasserie de Blaugies, Waltrude is the patron saint of Mons, Belgium. Every year, brewer and owner Pierre-Alex participates in the descent of the shrine during the festival Doudou in Mons. In 2017 on our inaugural visit to Belgium, we met up with Pierre-Alex and his family at Blaugies after the festival Doudou, talked about saisons and finished the evening with a memorable meal cooked at their restaurant Le Fourquet. 4.7% ABV

Fair Isle Odelette Bière de Garde – Odelette is a Bière de Garde lagered in a Missouri oak foeder for eight weeks. Dry yet rich, this malt forward farmhouse ale was brewed and garde during the cooler months welcoming the spring. Created with ingredients farmed in the Pacific Northwest. Fermented with our house blend of wild and feral yeasts and bacterias. 7.7% ABV

Islla St Rojo – A staple of Texas Sundays with some barbacoa tacos, this berliner is finished on real Big Red syrup. Perfect to start your Sunday morning or any other day! We don’t judge. 4.6% ABV

Ridgeway Lump of Coal – This 7.5% bittersweet chocolate stout is the best you could hope for in these dark times. Actually, come to think of it, considering how bad you’ve been, this little coal-black gem is more than you deserve for Christmas this year.

Ridgeway Santa Butt -This special porter is made for winter — rich and warming, the way they like it in the North Pole. It was inspired by this famous line from a well-loved children’s story book:

“And Santa sat on his great butt, drinking a hearty brew” 6% ABV

B-52 Cowabunga – Our Classic West Coast Double India Pale Ale dry-hopped with righteous amounts of Simcoe and Strata hops which provide stonefruit, dank, and tropical flavors with a crisp bitter finish. 8.5%ABV

B-52 Smoothie Tart Cranberry Orange – Brewed with barley, oats, and wheat, then conditioned on cranberry and orange puree, cinnamon, Tahitian vanilla, sea salt, and lactose to make it taste like a slice of deliciously tart crumble pie. 6%ABV

Great Divide Peppermint Bark Yeti – As the temperature drops, Yeti waxes the runners on his sled while visions of bold imperial stouts dance in his head. When the sleigh bells ring and the first flakes of snow begin to fall, Peppermint Bark Yeti is the antidote to winter’s bitter pall. The inclusion of peppermint chunks, chocolate, vanilla and lactose round out the roastiness and bitterness normally associated with Yeti making for a sweeter, holiday-themed version of our legendary imperial stout. 9.5% ABV

Sweetwater Almond Milk Stout – Sidle up to the perfect pint pub for an innovative new deliciously smooth, dark and indulgent classic-style milk stout, but with a tasty dairy-free almond milk twist. All of the flavor and mouthfeel of a bold tasting stout, yet lighter-better-faster, with a nod to the new non-dairy day dawning.

Super stouty and nicely balanced, this cow-less coup is an authentic tasting milk stout featuring flavors of roasted coffee, milk and dark chocolates. Almond flavor with some roasted malt smoooooths it all out for a whole new off the mainstream brew. 5.4% ABV

Odell Friek – This unique blend of framboise (raspberry sour ale) and traditional lambic kriek (cherry sour ale) is aged in oak barrels in our cellar. Fresh raspberries are then added to the wild fermented brew just prior to the final blending, creating a subtle sweetness to balance the tart cherry flavors. 6.9% ABV

Austin Beerworks Sputnik – A Russian Imperial Stout with an intense coffee aroma and bold flavor that perfectly compliments the silky oats and high alcohol. It will take your taste buds to orbit. 8.5%ABV

Bear King Blueberry Hills – Hazy Pale Ale Double Dry-Hopped. 5.8% ABV

903 Birthday Sasquatch – Dark chocolate milk stout with double fudge and toasted marshmallow. 9.8%ABV

Martin House Campfire – In early 2019, we released a limited edition brew – S’mores Stout. This year we decided to kick it up a notch and take it to the next level the only way we know how – whiskey barrels. Campfire is an imperial version of S’mores Stout, so it has a higher abv of 11.6%. This roasty stout has everything you would enjoy in a freshly made s’mores: chocolate, marshmallows, vanilla, graham crackers, and cocoa powder. It wouldn’t be a campfire without a little smoke, so we added a slight amount of smoked malts to the grain bill for that perfect touch. Finally, we aged it in whiskey barrels for 3 months. The result is a flavorful stout fit to be enjoyed on any cold Texas night in the woods or at home 11.6%ABV

New Wines This Week

(On-Premise Consumption or Off-Premise To Go)

Séléné Beaujolais Nouveau 2021 – From the winemakers:

“2021 was a year that wouldn’t stop. First we had the frost, which hit all of our parcels. We have 6 hectares now, with a fairly small production. After the frost, we had 6 hectares with almost no production! In April, we decided to purchase some fruit in advance from some nice organic plots nearby; there was no way we would have coped otherwise. Then there was the rain… It was very wet, meaning lots of disease. We had so much work to do in the vineyards, but we were working with biodynamics, and this really helped the health of what we were working with.

After all that, we didn’t have huge maturity in the fruit. We waited as long as we could and had to begin the harvest in late September. But once fermentations started, they went incredibly well. After 9 months, that was the first thing that went right for us! We’re really happy with where the wines have got to, and happy to say we haven’t needed to use any sulphur this year.

The Nouveau this year is mostly from the négoce fruit with just a little of ours added. We did a 6 day carbonic maceration, held it in concrete, and it’s really delicious. Zero sulphur, very direct, very easy to drink – a perfect primeur. We really hope you guys enjoy it.”

Domaine Robert Serol ‘Turbullent’ Sparkling Rosé NV – Winemaker notes: Vivid pink colour. Ripe grape, pear and raspberry aromas. In mouth, the aromatic expression of Gamay is emphasized by the bubbles finesse. Rounded attack well-balanced by a lively finish. 9% ABV

Altos Las Hormigas, Malbec, Terroir, Valle de UCO 2016 – The freshness of the Uco Valley invades this wine as it shows the ultimate expression of this special wine region in Mendoza. With an intense ruby red color, the nose is fruity and delivers some notes of violets. It has a medium body palate underpinned by structured tannins, filled with flavors of ripe fruits. The finish is fresh, with a vertical mineral bouquet. 2016 13.5%ABV

Margins Pinot Noir 2018 – Vinification: 100% destemmed. Fermented on skins for three days. Aged in neutral oak for 10 months. Native fermentation, no fining, no filtration, no other modifications or additions except 20 ppm of sulfur dioxide the week before bottling.

Bio: I stumbled upon Makjavich Vineyard in spring of 2017 while on my way to a square dance on the rural property of a good friend. This vineyard lies on the site of the 8th registered organic farm in the USA. Larry Makjavich planted these vines himself around 2011 and farmed them with friends for eight or so years, making the wine in his basement. Starting in January 2019, I began to co-farm this vineyard with Larry, and Margins has purchased all of the fruit since then.Ever on the quest for something ‘marginal,’ I am always striving to make very light bodied Pinot noir. I enjoy blurring the line between rosé and red wine in order to bring out the qualities of Pinot that I find to be most delicate and appealing.

Zulal Areni Classic 2018 – Areni is Armenia’s leading red grape variety, capable of making energetic wines full of bright fruity flavors. Zulal, meaning ‘
