For wine news this week, I’d like to take the time and highlight Soto Vino. This winemaking duo is currently working out of the facilities of the Austin Winery by way of San Antonio, but have roots learning the trade at Perdenals & WIlliam Chris vineyards. Their first offering we have in store is 21 Sauvage. These hand harvested Mourvedre grapes from Salt Lick vineyards have gone through full carbonic maceration and finish fermentation in stainless till bottling time. Consider this your 100% Texan take on Beaujolais Nouveau. Chill a bottle down and feel its powers chill you out.

Texas Keeper Cider Noir – Cider Noir is made from 100% Northern Spy apples double fermented with extra dark belgian candi, pecans and orange peel. Belgian candi, made from beet and date sugar, is a classic component of Dubbel and Trippel Ales. Dark fruit and toasted bread notes from the candi combine with ripe pear from the Spy. A hint of pecan and orange round out this stout cider. 11.1% ABV

Martin House Cookies & Cream – Cookie Dough Stout 6.2% abv & Rich Cream Ale 6% abv Combo pack!

Founder’s Frootwood– They took a crisp, light-bodied cherry ale and hid it away in oak barrels that have held both bourbon and maple syrup. After a lengthy stint, it emerged a changed beer, blanketed in notes of warm vanilla and earthy sweetness. The wood proves itself the star of this beer, adding depth and taming the tart cherry while the maple imposes a velvety texture that lingers for not a moment too long. 8% ABV

St Bernardus Christmas Ale – This specialty beer is characterized by its deep dark colour, with a creamy, thick head and a full, almost velvety taste with a fruity nose. Brewed annually for the holiday season, the long winter nights are perfect moments to savour this ale with or without friends and to enjoy its unique, complex taste. 10%ABV

Odell Lugene Chocolate Milk Stout – Lugene Chocolate Milk Stout is brewed with milk sugar and milk chocolate. The rich and creamy brew reminds us of a cold glass of chocolate milk and our hometown “Aggie” roots. 8.5% ABV

Saint Arnold French Press– French Press is an imperial coffee porter brewed with Java Pura Coffee Roasters Espresso blend coffee. 9.4%ABV

Saint Arnold Christmas – A rich, copper colored, hearty ale perfect for the holiday season with a malty sweetness and spicy hop character. The generous use of five different malts is responsible for the full flavor and high alcohol level of this beer. 7.5% ABV

Champion Family Recipe – This Vienna Lager made with Vienna malt, Magnum, and Saaz hops is a partnership between Champion Brewing and Duke’s Mayonnaise to produce the perfect lager to pair with the south’s favorite sandwich – a mouthwatering, Duke’s-slathered BLT.

**No mayo was used in brewing this beer** 5.1%ABV

Eden Deep Cut Harvest Cider – PROFILE: Dry, hazy, full-bodied. APPLE VARIETIES: Golden Russet • Somerset Redstreak • Dabinett • Yarlington Mill • McIntosh • Empire. 6.2%ABV

Eggenberg Helle Weizen – Inspired by the delicate wheat beers of Bavaria, Eggenberg’s newest release is a full-bodied and open-fermented Hefeweizen brewed with both sunny days and snowy nights (on the slopes) in mind. Waves of banana and clove coat the palate as you’d expect any traditional Bavarian wheat beer to, but the hint of bubble gum that lingers behind is the first sign that just one sip of this beer won’t be enough.

Big Bad Baptist Naked Baptist – BID BAD DISCLAIMER: what you are about to drink is the naked depiction of Big Bad Baptist in the way our brewers intended it. Whiskey Barrel Aged deliciousness, unadulterated by coffee or cacao. Our brewers have been begging to bottle this beer for years. 2021, they get their wish. 13.1%ABV

Epic Big Bad Baptist Double Jam – Raspberry, Blackberry & Coffee together – like breakfast on a Sunday morning – in what we like to call the most important beer of the day. Enjoy at the crack of dawn or as an endcap to the perfect evening, we don’t judge! 13.1% ABV

Rootstock Belgian Cider – Fermented using a traditional Belgian beer yeast. Fresh peach and apple blossom aromas accompany a pleasant minerality and apple flavor that makes this cider one that is not to be missed 6.5%ABV

Rootstock Hopped Hard Cider – Hopped Hard Cider is a semi-dry cider made from estate grown Crispin apples and locally grown Cascade hops. This heavily aromatic cider exhibits a bouquet of fresh lemon and pine paired perfectly with the taste of fresh picked apples. With its balanced sweetness and acidity this unique cider is sure to please beer and cider drinkers alike. 6.9%ABV

NOLA Black Berry Squeeze – Wheat Ale with Blackberry 5.5ABV

Legal Draft Legal Holiday – A rich winter warmer made with roasted malts, cinnamon, nutmeg and vanilla. 8% ABV

Bardos Mestizo Yellow – Gleaned with friends from a private, old orchard (with some more current plantings) on Occidental Road in Sebastopol, this cider was aged clean in stainless with no added yeast or sulphites. It is mainly older Jonathans with some recently planted Russets and other mid-varietal fall apples. Aged for only 6 weeks, the result is a very fruity, bubblegum-meet-fejoia nose and a dry mineral finish.

Harvested sporadically over the course of weeks throughout September, 2020. Bottled on November 20th, 2020, the day of ♀.

Firestone Walker XXV -This year’s winner, our 25th Anniversary Ale, is a blend of Parabola Autumn Edition, Tequila Barrel Merkin, Brandy Barrel Barley Wine, Stickee Monkee, and Whiskey Barrel Wheat Wine.

New Wines This Week

Chateau d’Oupia Les Hérétiques Pays D’Hérault – André Iché inherited an impressive 13th century castle and a large estate in the barren Minervois region. Iché, now in  his mid sixties and never a member of his village coop, tended his very old vines and made his wines but sold everything in bulk to local négociants. Fifteen years ago, a Burgundian winemaker happened to be in Oupia, tasted Iché’s wines, and was so enthused that he convinced Iché to bottle and market his production. Since then, Iché has become an eternal twenty-year-old.

He has expanded his vineyard holdings and now also vinifies several cuvées of Minervois with the best production, the Cuvée des Barons and Nobilis, aged in new oak barrels. He has rebuilt a cellar, and is now contemplating buying and cleaning up some overgrown and steep terraces that have been abandoned since the late 19th century.

The Minervois Tradition is 60% Carignan (from vineyards up to 100 years old), 30% Syrah and 10% Grenache. It is aromatic, full and densely colored, with a long finish of dark fruits. The wine is elegant and balanced — it is both enjoyable to drink young and can age 5-7 years. Cuvée des Barons and Nobilis are 60% Syrah and 40% Carignan, from a selection of old vines in the best plots, and are aged in Bordeaux barriques for 20 months. They are slower to evolve than the cuvée Tradition, and exhibit more elegance and restraint, but similar dark berries and spicy aromas.

Zulal Areni Classic 2018 – Areni is Armenia’s leading red grape variety, capable of making energetic wines full of bright fruity flavors. Zulal, meaning ‘pure’ in Armenian, was created to express the purest characteristics of Armenia’s indigenous grape varieties grown in volcanic soils at high elevation. The 2018 Areni is a classic expression of the ancient Areni variety.

The 2018 Areni is an aromatic wine with notes of red cherries, plums and notes of pepper. On the palate it’s medium-bodied, with refreshing acidity and concentrated flavors of berries and spices. 13% ABV

Saloon Door Kemah Suprema Walser Alpine Lager owes its inspiration to the crisp mountain Lagers of the Swiss Appenzell.  Rich golden in color with a delicately balanced profile of German Pilsner malt, two varieties of Munich malt, and Spelt.  Hopped with choice Hersbrucker, Tettnanger & Hallertau Tradition – meadow herbs and subtle spicy floral elements marry fait notes of juniper and candied citrus. 4.8%ABV

Brewtorium Sidewalk Piper– Tradition meets legend in this malt-forward medium-bodied ale. Rich flavors of toffee and maple coalesce into a deep amber colored beer with a pleasant candied hazelnut finish. 5.1%ABV

Hi Sign Fresh Hop Hi-CBomb diggity Fresh Hopped Hi-C IPA. 6.9% ABV

Redhorn Hap Slappy IPANearly every craft beer fan that we speak to says they judge a brewery by its IPA. Well, we don’t see why we should be held to any lesser of a standard! Order up a HapSlappy and you won’t be let down. Brewed dry, HapSlappy has a crisp malty finish and balanced by an extremely palatable 75 IBUs from a burst of late kettle hops. Utilizing the unique characteristics of northwest American hops, HapSlappy achieves a citrusy, piney, and earthy balance. We finish this beer with whole leaf hops after the boil in a pressurized hop back system to give HapSlappy IPA a nose and flavor unlike the rest. 7%ABV

While there is no actual chocolate or marshmallow in here, you’ll be hard pressed to convince your senses that they’re not. 5.2%ABV

Lagunitas Unrefined Shugga – This new iteration of Shugga’ has all the rich, winterly-warming flavors you know and love from our fan-fav seasonal sweet release, with a fancy upgrade—Whole Cane Sugar added to the brew. Along with this sweet update comes a new name: Unrefined Shugga’. 10%ABV

Left Hand White Russian Nitro – Indulge in a devilishly delicious stout. Inspired by the famous German dessert, Black Forest Nitro tempts taste buds with tart black cherries and aromas of rich chocolate cake. Layers of flavor reminiscent of spiked fresh cherries and dark chocolate ganache cascade on a canvas of nitrogen. The super smooth mouthfeel is delicate and light while staying diabolically decadent. Samuel Smith’s Winter Welcome – This seasonal beer is a limited edition brewed for the short days and long nights of winter. The full body resulting from fermentation in ‘stone Yorkshire squares’ and the luxurious malt character, which will appeal to a broad range of drinkers, is balanced against whole-dried Fuggle and Golding hops with nuances and complexities that should be contemplated before an open fire. 6%ABV

Stone Xocoveza– A Mexican hot chocolate inspired stout. Intense cinnamon, cocoa and coffee are followed by nutmeg and peppers. As the beer warms up, the flavor combinations evolve and the cocoa and vanilla notes really start to open up. 8.1%ABV

Equilibrium Fluctuation DDH DIPA – Fluctuations from the sun hurl particles of plasma towards earth and create the dramatic display known as the Aurora Borealis. Fluctuation is our 8.1 % DIPA that releases bright tropical notes of passion fruit, mango, pineapple, and lychee with an undercurrent of sorbet and cream. Fluctuation tastes highly resinous and tropical with an assertive yet soft bitterness and our #EQjuice finish. Fluctuation features the Aurora Borealis, illustrated by local artist, Julia Green. 8.1% ABV

Equilibrium Fractal Mosaic – Fractal Mosaic is the first release from our small-batch Research Series. A fractal is something simple at the core yet can produce wonderful and amazingly complex results. The fractal series will have only pale malt and a single hop (simple). We will use these beers to investigate how different hops manifest through our processes, allowing us to optimize both our use of hops and our hopping techniques. Fractal Mosaic pours a resinous-hazy-straw yellow releasing complex aromas of dank citrus, earthy grass, tropical melon, and a hint of berries (complex). The taste is highly resinous, piney, juicey, with a slightly creamy mouthfeel, and a firm but rounded bitterness. The medley of characteristics makes the name “Fractal Mosaic” warranted indeed. 6.8% ABV

Equilibrium MC3 TIPA – The evolution is here and we are excited to bring it to you. MC³ breaks the laws of physics and implodes reality. Our flagship DIPA ‘MC²’ is photon’s hopping rate SQUARED, this TIPA is photon’s hop bill CUBED. Where Photon explodes into a rainbow of flavors, our first ever Double Whirlpool (DW) creates a rainbow of flavor that gets focused back to a singular stream of deliciousness as the next step in this energy evolution. This unique DW works synergistically with the appropriate Energy DH treatment.

A dense hop saturated mouthfeel from our Double Whirlpool coats the tongue and our EQ juice is amplified by our Energy dry-hop methods to near cosmic boom levels. 10% ABV

Equilibrium MC2 DIPA – mc² is Photon’s big brother. We literally took Photon’s hopping rate and squared it. This DIPA is our tribute to the amazing relationship that energy and mass are balanced, proportional to the speed of a photon squared. It pours a hazy tangerine color, releasing bright tropical notes of mango, pineapple, and apricot. mc² tastes like succulent mango juice loaded with chewy hop resins. It’s very drinkable for 8.0%; be careful, this one can sneak up on you

Equilibrium Light At The End Of The Tunnel – Light At The End of The Tunnel uses Photon as its inspiration with some modifications and upgrades including an all Survivable hop blend for the whirlpool and a large dose of Lupomax Citra in addition to a supersized Photon hop bill. Aromas and flavors of soft pineapple, navel orange, stone fruit, EQ’s rainbow melon, and lime juice radiate with a touch of pine resin at the finish making this beer an easy drinking accompaniment to celebrate the fact that we hopefully have the finish line in site. 6.8% ABv

Tilquin Gueuze L’Ancienne – The Gueuze Tilquin à l’ancienne (7.0% alc / vol) is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.

The taste is tart and dry but has a certain roundness that makes this Gueuze à l’ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose.

Tilquin Oude Mirabelle – During this season 20|21, we blended a new fruit beer, the Mirabelle Tilquin à l’ancienne 7.0 % alc. (available in 37,5cl & 75cl), which is is made from the fermentation of 240 g of Mirabelle plums by liter of lambic. 7% ABV

Tilquin Rullquin – Made with central Texas wildflower honey

Odd Side Ales Marshmallow Coconut Hazel’s – Imperial stout aged in bourbon barrels with coffee, coconut, natural hazelnut and toasted marshmallow flavorings. 11% ABV

Odd Side Ales Mayan Mocha BBA – Inspired by Mexican hot chocolate. It is carefully blended with Dutch chocolate coffee, cinnamon, nutmeg, and habaneros which will leave you with the perfect balance of chocolate and heat. 11% ABV

Martin House Puppy Chow – Stout with Peanut Butter, Chocolate, Powdered Sugar, and Chex. 8% ABV

Martin House Delilah – Cran-Raspberry Sour. 10% ABV

Tupps Ugly Sweater Holiday Spice Amber Ale – Amber ale brewed with holiday spices. 5.2%ABV

New Wines This Week

Caruso e Minini Catarratto 2018 – Located on Sicily’s western-most coast near the town of Marsala, Caruso & Minini boasts a history that harks back to the late 1800’s when Antonio Caruso bought the company to grow grapes for the nearby Marsala factories. The company was passed through subsequent generations until Nino Caruso finally decided to begin making and bottling his own wine in the mid 1900’s. In 2004, Stefano Caruso joined forces with Mario Minini of Lombardy to launch the present-day winery, producing wines from indigenous Sicilian varietals such as Catarratto, Nero d’Avola, Frappato, Inzolia, and Nerello Mascalese. Today, Stefano’s daughter Giovanna works closely with her father to head up this historic winery.

Fresh and clean. Elegant and balanced fragrance that ends in a mineral and long finish. Pair with a simple lemon pasta, white meat or stand alone as an aperitif.

Bright straw yellow. Perfumed aromas of ripe tropical fruit, white flowers and lime. Bright and crisp but with a suavem rich mouthfeel that coats teh palate with previse Catarratto Lucido flavors of apricot, lime and herbs. Closes long dense and multilayered with a pungent floral quality. An absolutely knockout Catarratto, very likely the best I tried this year. Native yeasts and stainless steel only. Though the label doesn’t state so, this is 100% Catarratto Lucido. 13% ABV

Hamilton Russell Ashbourne 2018 – A blend of 80% Sauvignon Blanc and 20% Chardonnay, the 2018 Sauvignon Blanc Chardonnay opens to a Sauvignon Blanc nose with the added richness of the Chardonnay to round the edges of the greenness associated with Sauvignon Blanc. While the notes of green bell pepper are present in the glass, there is a sweet caramel-apple tone hiding just under the grapefruit tones, becoming more evident on the palate. The wine is medium-bodied and has a slight touch of sweetness on the palate, as this does have almost two grams of residual sugar. It ends with a simple finish that lingers with tons of juicy pears and grapefruit.

Palivou, Anemos, Agiorgitiko 2020 -A deep-colored purple wine with intense fruity and clean aromas and the dominated flavors of cherries, strawberries and gooseberries. The silky mouthfeel and the grape juice aftertaste give the impression that you are tasting grapes from the vineyard during September.13.5%ABV

Les Enfants Sauvages “Che Chauvio” Rouge – “Che Chauvio” is a phrase from the Occitan dialect meaning “If you knew” because it is so atypical, if you only knew where it comes from… This wine comes from 3 vineyards (2 plots of Cinsault and one plot of Syrah).

Syrah is pressed to tank / Cinsault is harvested at ripeness and added (whole-cluster) to the Syrah mid-fermentation for 3-5 / racked and pressed and finished in stainless steel. 11.5% ABV

Georges DuBoeuf Beaujolias Nouveau An intense, brilliant cherry colour with purplish tints. Complex nose with red and black berry aromas. A smooth wine with fine tannins, harmonious and complete. Ideal for all occasions, from aperitif to cheese. 100% Gamay 12.5%ABV

Dutchess Walser Alpine Lager Walser Alpine Lager owes its inspiration to the crisp mountain Lagers of the Swiss Appenzell.  Rich golden in color with a delicately balanced profile of German Pilsner malt, two varieties of Munich malt, and Spelt.  Hopped with choice Hersbrucker, Tettnanger & Hallertau Tradition – meadow herbs and subtle spicy floral elements marry fait notes of juniper and candied citrus. 4.8%ABV

Saloon Door Persnickety Citrus WheatCitrus Wheat. A zestiful festival. A bumper crop of citrus, fruit peel and all jam packed on the quantum level into each glass. This beer is summer vacation. 6.51%ABV

It’s delightful, it’s delicious, it’s de-lovely…

Ya know, here at the shop, you can tell at glance what a swell time it is for your beer based romance! It’s like every time you walk through the front door you can hear dear mother nature murring “let yourself go.” So since you’ve been such sweet chickadees let’s dive into what’s new this week!

Phew, y’all!!! It’s been a real busy one here at the store.  Forget about 99 bottles of beer on the wall, try 2400 cases going up it. Yeah that’s right, we’ve got the goods in for this year’s advent boxes… and if you don’t want to miss out, make sure you’ve got one reserved. I mean, hot diggity dog, Y’all are knocking out the pre-sales of them! As a friendly reminder, pickups will begin November the 19th. We’ve got some good stuff in store for y’all.

This week also has us barreling through those kegs! If you’ve spent any time in the store seeking a recommendation, you might recall me speaking adoringly of dark lagers. Simply put, I LOVE the style and think it’s perfect for Central Texas. As luck would have it, we’ve got Austin Beerworks Black Thunder on draft! Woohoo!!! For those hop heads out there- you’re in luck. We snagged the last keg of the ever-so-lovely Crosby fresh hop IPA from St. Elmo, that rare & lush gem Juicemeister from Live Oak, the crisp and piney Secret Beach of Meanwhile provenance, and for those wanting a good ol’ classic American style there’s Lakewood’s IPA. We’ve kept things rounded out with a last ode to summer, putting on Peach Emoji from Independence. To the folks in the back asking about something dark, it’s coming. I imagine by the end of the weekend we’ll have something tasty in the barrel aged department.

The news from the wine department this week finds us lousy with treasures. I’m over the moon with the clutch of 2020 releases from Southold Farm & Cellar (like, go follow them on Insta  now and make a plan to visit them!). Their Weapons of Choice is a decidedly Texan take on Cabernet, no Cali fruit bombs dropped. Imagine a world not overly aged in oak. The Future for Miracles syrah is jovial & makes for a perfect partner in crime. It’s really exciting to see how Texas wine makers are making something markedly different from those big meaty chewy Rhône syrahs. This is finess & nuance. This is floral & earthy. This gal has what it takes to age well, if you can wait that long. However, production for these beauties is between 94-114 cases, so there’s not too much to go around. Two other  bottles I’ve been patiently waiting to get my hands on are the red and white from Artifice wines of the Canary Islands. Both are sourced from small parcels of vines on volcanic soils, but it’s the white that really expresses that mineral quality. The barrel fermentation & subsequent 11 month aging impart a creamy note, with just a hint of an oxidative quality. It’s a rich white waiting to be paired with a meal. Their red is simply intoxicating. Take some time to appreciate the bouquet of smells coming from it. You’ll be lost in an incense & crushed violet fantasy. Those spice and herbaceous components compliment the lush red fruit and balanced acid notes. This is a Thanksgiving winner. You’ll impress everyone.

Make sure you set aside some time next Saturday afternoon for our Beaujolais Nouveau party. The cases will be arriving early next week and available for sale starting the 18th. Just like the wine, this fête will be fun, easy,  & breezy for ya covergirl. Expect special by-the-glass options, light snacks, and all the Edith Piaf you can handle to have you thinking too-  “Non, je ne regrette rien!” On November the 27th the folks from Weathered Souls will be in house for a TAP TAKEOVER  to celebrate their anniversary. We’ll have brews on tap that you won’t be able to find anywhere outside of the brewery. Look out for some more wine tastings in December: our friends from Republic National are in on the 3rd, David Mayfield Selections will be here on the 18th to highlight the exciting things coming from Les Lunes wines of California.

Modern Times Terebellum – Prepare for a life-altering flavor expedition. 2-row, golden naked oats, wheat, and flaked oats set the stage for base for a soul-stirringly graceful dance by Mosaic, Motueka, El Dorado, and Vic Secret hops. The final beer is an absolute showstopper, with notes of lemon-lime, watermelon, and subtle pine that move in perfect synchronization across the palate. Alesmith Speedway Stout w/ Madagascar Vanilla & Ceylon Cinnamon – For this special edition of our signature imperial stout with coffee we decided to offer up some comfort for the cooler fall and winter months. A generous amount of Madagascar vanilla beans along with just the right amount of Ceylon Alba cinnamon provides this beer a delicate milky sweetness, notes of chocolate, roast, and a subtle spiciness.12% ABV

Alesmith Tower of Flower – We teamed up once again with our good friends at Beachwood Brewing to make this behemoth west coast style India Pale Ale that has been double dry-hopped with Galaxy, Cashmere and Nelson hops. This monstrous hop blend gives this beer intense notes of passion fruit, citrus, peach and melon. 6.8% ABV

American Solera Foederville – Oak aged sour dry hopped with Hallertau Blanc. 5.4%ABV

El Segundo Great Cut – We can think of only two things that come close to perfection. First up, the diamond… judged by its cut, color, carat and clarity. Treasured by many as the hardest, most valuable stone found the world ’round. It’s also the shape of America’s pastime, which on sight alone can bring about fond memories of hot dogs, beer, fresh cut grass and of course, hitting that 0-2 count, game-winning walkoff Grand Slam so many dreamt about. And on deck in our near-perfection line up is, obviously, the West Coast IPA… which just so happens to share traits with diamonds as it is partly judged by clarity and color and it is also the favorite pastime of all true IPA lovers. Once you factor in the great cut of aromatics the Galaxy hop brings to the ballpark, this straight up sandlot nostalgia may have you thinking that maybe there is, in fact, one perfect thing. 6.5% ABV

Humble Forager Bungee Jump – Inspired by those delicious pineapple upside down cakes, we layered juicy dessert sour with pineapples, sweet cherries and Madagascar vanilla beans before dusting with brown sugar and ceylon cinnamon. 6% ABV

Untitled Art Pixie Mix Cherry Crusher – Hard seltzer with nostalgic cherry flavor. 5.5% ABV

Untitled Art Bliss on the Beach – Imperial seltzer with peach puree, orange juice concentrate, cranberry concentrate. 9% ABV

Untitled Art Florida Weisse – It’s back for version 5! Berliner weisse style ale with guava, passionfruit, and prickly pear. 4.8% ABV

Harpoon Winter Warmer – Winter Warmer was Harpoon’s first seasonal beer. It was designed to be enjoyed during the holiday season. Note the aroma of cinnamon. Clown Shoes Bubble Farm – The Intergalactic League of Farmers waits for no man, even with a crop as delicate as bubbles. Elegant crops, of course, and no matter the trouble in harvesting them it’s always worthwhile to see those beauties shine. Light in color with a touch of haze, this American IPA maintains an approachable medium-body without sacrificing any of the full aroma and flavor of copious dry hopping additions of Simcoe, Azacca, and Idaho 7 hops. 6.5% ABV

Rahr & Sons Drunken Santa – Barrel aged London Ale.9.4%ABV

Shacksbury Luna – An electric alchemy of dry Basque cider from Spain blended with local Vermont La Crescent grapes. This cosmic wonder explores the edges of expectations for what defines cider and wine, in order to create a category that is otherworldly. Luna is bright but grounded with punchy acidity and balanced tannins. 9.5% alc/vol.

Schneider Aventinus – The worldwide standard for wheat doppelbock.

Hedgehog Mango Tango – Farmhouse ale with mango and habanero. Dry, fruity and slightly funky with a habanero kick. Now in cans! 7% ABV

Southold Farm & Cellars Future for Miracles 2020

Another year, another killer Syrah vintage from RCV. Now don’t expect a huge wine here, this is the more finessed side of Syrah, the fun side of Syrah… The wine then opens up with a bouquet reminiscent of the first few days of spring- floral, all roses and dirt, the first ripe plums of the season. Drink it now or set it aside for a couple of years if you can be patient.

Unfortunately for all of us, there are a measly 95 cases. And we’ve contemplated drinking all of it ourselves.

Southold Farm & Cellars [18 to 1] 2020 – Petit Verdot always strives to be a monster, tannic, brash… this is why it’s always used sparingly in Bordeaux. Luckily this vintage, we had a perfect foil to this monster in the Mataro. That brashness is quieted to a dark rumbling, while bright red fruit dances throughout. Like an African Rhino with its Oxpeckers, these two are symbiotic.

Southold Farm & Cellars Weapons of Choice 2020 -Once again, let us remind you, this is Cabernet Sauvignon from a time before fruit bombs and 2×4 oak elements. A time that solidified this as a major variety in France. Like those, this is a wine of finesse, a true expression of Cabernet Sauvignon in Texas, that you can only find here. Restrained, savory, and just damn delicious. This wine will definitely continue to evolve and blossom if you have the patience!

Southold Farm & Cellars Little Bit of Swing 2020 – 100% Petit Verdot. It’s big and brash. Though this wine is a baby, don’t let it fool you, this a hungry baby at 3am pissed off you decided to start sleep-training it. Sure you could get up, or in this case open it, and it enjoy it now, but you’ll be so much happier you gave it time to develop on its own. So with that we suggest at least an hour decant when opening, you’ll both be much happier.

Vinca Minor Moonland Rosé – Moonland is Jason Charles of Vinca Minor’s delightfully playful project of co-fermenting grapes, apples, and pears to explore what resiliency and sustainability look like in the dramatic and ever-changing climate of northern California. While the subject is serious, the wines are whimsical and taste as good as they look!

Wildmakers Brias de Guarilihue Rose 2019 – Fresh Rosé from the Itata Valley. 12% ABV

Château Malbat Bordeaux Rouge 2019 – Since 1865, Château Malbat is the pride and joy of the Rochet family. Located at the heart of the Bordeaux wine region, between the Garonne and the Dordogne rivers, the family vineyard stretches over 85 hectares (210 acres) and benefits from a climate perfectly suited to the production of the finest Bordeaux wines. Indeed, this oceanic climate combines morning mists, which provide high humidity in the atmosphere, with a strong sunshine during the rest of the day favoring grape ripening.

“Lovely deep purple colour. Ripe fruit aromas, particularly cherry and plum. Elegant, fruity and supple body, with round tannins and a smooth finish.”-Winemaker Notes

Constant Crush Cab Franc Field Blend 2020 – The beauty of the Eola Springs Vineyard is that its size provides an expansive range of soils, elevations, and aspects. This young field blend block of Cabernet Franc is grown on a northwest-facing slope on ancient marine sedimentary soils at the northern end of the site. The vines are planted at nearly twice the density of the old vine block, and to three clones of Cabernet Franc. Steiner, a California Heirloom selection, 214 & 327 selections from the Loire Valley.

• The Willamette Valley, and Eola-Amity Hills AVA are large with many varied soils, aspects and hidden valleys to be explored. It is with this in mind that we seek sites and farmers to work with who share our interest in understanding what this wine-growing valley is possible of.

• Fruit was harvested in mid-October and captured the warmth of the season showing sage, kalamata olive and dark violet fruit flavors. Only 50% of this fermentation was whole cluster and as a result the wine has firm tannins and a darker fruit profile than the 2019 vintage.

Constant Crush Flavors in Blend 2020 – Sauvignon blanc has a truly unique character in the Willamette Valley, when farmed similarly to the other varieties more common in the region. It is intense and exotic having ripe guava and tropical fruit notes and a weighty and full mouthful of fruit. The extended daylight hours and UV light that the Willamette Valley receives during the growing season is responsible for the photodegradation of pyrazines and as such the variety delivers non of its characteristic grassiness. In fact, the variety ripens so fully here that we decided that it required the added fresh acidity that comes from heirloom clone Chardonnay. Together these varieties create a more engaging and harmonious white wine. 12.8% abv

Field Recordings Paso Piquette Project -This piquette came about as a community effort as well: We gathered pomace from 9 other wineries in the Paso Robles area and brought it all back to Tin City to make this wine.

If you’re not familiar with this style, it’s made by rehydrating skins that have been crushed in production. We let the skins soak for a few days, then ferment. The result is a bubbly, low alcohol, super drinkable red wine. Yum.

Tastes like: Candied raspberries, Bonne Maman Mixed Fruit preserves, Lavender and Sage. 7% ABV

Borja Perez Artifice Listan Tinto 2018 – “Produced with Listán Negro from different vineyards, altitudes and soils, the 2018 Artífice Tinto fermented mostly in stainless steel with some stems, thanks to the new destemmer he bought. The wine matured separately in oak barrels and foudres for 10 to 11 months and then was blended together and bottled. It has a meaty note on the nose, quite different from the majority of Listán Negro wines from the island, reminiscent of boiled ham, with a smoky/flinty touch. It’s juicy and very pleasant, with a soft texture. With time in the glass, notes of dried petals and subtle pumice stone emerge, along with a peppery twist and volcanic undertones. It has bright flavors and very good freshness, tasty, spicy and a little herbal with nuances that Pérez attributes to the use of the stems. It’s only stems… but I like it! 8,500 bottles and 280 magnums produced. It was bottled in March 2018.” Wine Advocate

“100% Listán Negro sourced from different parcels in Ycoden Daute Isora. Each parcel is vinified separately in steel and concrete tanks and blended into Frech Foudres and very old french barriques. It rests 8 months in vitro before release.” importer

Borja Perez Artifice Listan Blanco 2018 – 100% Listán Blanco (called Palomino in the region of Jerez) from old vines. The wine was fermented and aged in 500 liter French barrell. The wine was then aged for 7 months on the lees. Minimal sulphur was added at bottling. The volcanic soils lends a fine mineral aspect to this refreshing white wine.

Rather than brew a bitter bomb, our balanced American India Pale Ale bursts with tropical flavors like grapefruit, papaya, and tangerine from a blend of Bravo, Citra, Mosaic, and Mandarina hops. This everyday IPA is bold without being brash. 7%ABV

Meanwhile Secret BeachSan Diego Style IPA with a light biscuity malt character that allows the hop flavors to shine through. Notes of marmalade,  blueberries and the devil’s lettuce. 6.2%ABV 55IBU

Live Oak JuicemeisterJuicemeister is where IPA meets Bavarian ale. This beer benefits from a sizable late addition of Huell Melon and Strata hops that contributes to a powerful floral, citrus aroma while maintaining a mild bitterness, and bubblegum flavors imparted by our Bavarian yeast strain!
