I’m still here… and so is the rest of the gang here at Whichcraft! I know the weather has been kinda gloomy this week, but keep in mind those May flowers just waiting to bloom. When the Sun does decide to pop out from those clouds come hang out with us in the beer garden for a pint! We’re cooking up some fun things for next week.

Two new brewery alerts! Welcome to the shelves East Brothers from Cali & D9 Brewing from North Carolina. We also have fresh stock from our friends out in Marble Falls, Bear King. On the wine front, there’s some super cool new sparkling and red options. Check them all out below.

Oh, also worth mentioning, we’ve grown our hours back! So they go as follows: Monday 8am-9pm, Tuesday-Thursday 8am-10pm, Friday & Saturday 8am-11pm, Sunday 12pm-9pm.

Against The Grain Pile of Face -What’s the first thing you need to do when you start a brewery? Develop your logo, of course. With any potentially decent brewery, your logo must be a skull, it has to be a skull, you’ll be laughed out of the room if you don’t have a skull. So we went hunting in the area where all the great skulls have come from and were shit out of luck. By those fateful dumpsters all we found was this deformed neanderthal type deal, or maybe it’s from an ape, and a big ol’ pile of face. To celebrate our lack of success in finding a really cool skull, we are embracing another required cliché by brewing this American IPA. A modicum of simple malts provide the mediocre backbone to the mountain of various hops that are utilized and rotated throughout the brewing process. Look for dank overtones supported by various citrus and heirloom fruits. It’s the straight forward IPA that you always wanted from us. You lucky bastard. 6.5% ABV

Buchalada Raspberry Hibiscus -Raspberry Hibiscus Boozy Kombucha Seltzer. 4.5%

Avery Paws and Claws IPA -Avery’s brewers set out to make an IPA that would highlight the beauty of both West Coast and East Coast IPAs in one beer. The brewers use new school dry hopping techniques to give Paws & Claws IPA a genuine and juicy haze, while Simcoe, Centennial, Chinook, and Cascade hops deliver the piney hop flavor and aroma of your favorite West Coast IPA. 7.5% ABV

Bear King Empty Promise Raspberry Ale -The late and dry hopping methods give this approachable IPA a huge tropical fruit and citrus flavor and aroma. The “soft” bitterness from this brew sets itself apart from the classic West Coast IPAs. 6% ABV

Bear King Misty Lady Hazy IPA -They double dry-hopped this hazy IPA with Amarillo, Citra, Azacca, & Idaho Gem to achieve those citrusy-sweet vibes. The real zinger is the guava. It adds tasty notes of tropical zest and melon. 6.5% ABV

D9 Brewing Brewer’s Day Off Gose -Cucumber Melon Gose. 4.8% ABV

D9 Brewing Brown Sugar Brown Cow -This Mocha Brown ale needed a fanatical bovine with a brown sugar sweet side and a kick of Colombian coffee. Brown Sugar Brown Cow is brewed with chocolate, vanilla, brown sugar and Colombian coffee. We added a hint of lactose, and this brew is a mocha coffee and cream concoction so good you’ll say its name. 6.6% ABV

D9 Brewing Hakuna Matata -Tropical IPA brewed using hops from the US, UK, Germany, Slovenia, and New Zealand. The result is a much more balanced, less bitter but more flavorful Dank-style IPA with hints of Mandarin Orange, Pineapple, Grapefruit, and Elderflower. 6.6% ABV

East Brother Gold IPA -An American hoppy wheat ale with a bright nose, distinctive texture — bold on the palate, dry finish. 7.3% ABV

East Brother Red IPA -An easy-going American IPA with a distinctive malt balance. A ton of peach and stone fruit hop character. 6.5% ABV

Fair State Dream Universe No 755 -Hazy IPA collaboration with Modist and Blackstack Brewing. 7% ABV

Schramm’s Blackberry Mead -Schramm’s Blackberry Mead is made with raw, unfiltered honey and whole blackberries. It is an intensely fruity, medium sweet melomel with vanilla and cinnamon aromatics. This hand-crafted beverage pairs well with creamy cheeses, duck, veal and good company. Serve at cellar temperature or lightly chilled. 14% ABV

New Wine This Week

Keush Origins Sparkling – Keush winery was created by Vahe Keushguerian with a desire to create a product that married extreme high elevation farming and un-grafted ancient varietals. The vineyards are planted on rich volcanic soil. It is an opus with a 6000 year origin. The vineyards are positioned 500 metres from the Armenian/Azeri border and at 1800 meters are the highest in the country and among the highest in the world. Keush is a pioneer in making a Méthode Traditionelle sparkling wine from indigenous Armenian grape varietals.

Winemaker Arman Manoukian was born and raised in the wine region of Vayots Dzor. Arman received his BA and MA degrees in Viticulture at the Yerevan State Agrarian Institute and then went onto continue his education at the Viticulture and Enology School of Montpellier, France. He has been the chief winemaker for Keush since its inception in 2013. Jerome Barret is consulting winemaker. He has extensive experience working in Champagne, having worked as cellar master for two major champagne houses; Nicolas Feuillatte and Champagne Boizel.

Grapes sourced from Vayots Dzor province in Armenia. The vineyards are un-grafted, 60- 100 years old. Located between 1500- 1800m above sea level.

These are some of the highest elevation vineyards in the northern hemisphere, and at 1800 m, the highest elevation vineyards in the world that produce méthode traditionnelle.

Grape / Blend- Voskehat, Khatouni, Areni. Origin- Khachik, Vayots Dzor, Armenia.

Tasting Notes-Origins represents the perfect storm of limestone soil and volcanic rock growing idyllic crisp white grapes, ripened by sunlight from high elevation vineyards. A product born from a 6,000 – year- old viticulture history, Origins embodies the bold Armenian soul and its wine loving spirit. 12% ABV

L’Onesta Rosé Lambrusco -Sparkling dry wine, with a characteristic bouquet of violets. Ruby-red color with a dry but gentle finish, light and crisp. An excellent companion with many Italian dishes, especially those including parmesan, prosciutto, or balsamic vinegar. 11% ABV

William Chris 2018 Mourvèdre – William Chris Vineyards focuses on low intervention, 100% Texas-grown wine. Since 2008, winegrowers William “Bill” Blackmon and Chris Brundrett have expanded the estate vineyards and partnered with family-owned farms across the state to source only the highest-quality fruit.

Amazing — all Texas grapes and delicious. Not many red varietals in Texas that are so noteworthy. Deep purple hue. High alcohol. On the nose— forest floor, dark fruit, oak, vanilla, and white pepper. On the palate- black currant, tobacco, cigar box, and cassis. 14.5% ABV

Cantina Gaffino “Tubbo” Merlot 2019 -The Tubbo is a pleasant expression of another grape that is now typical of our area: Merlot. The name of this wine, Tubbo, was inspired by an old edict of Pope Sixtus V who figured out how to regulate the wine sells through new measuring units like the litre. it was called tubbo
The merlot is the most environmental vineyard, able to interpret the areas of origin as a few vineyards and generating so wines totally different for every terroir. 13.5% ABV

Prairie Blueberry BoyfriendSour ale with blueberries and lemon zest. 5.4% ABV

Original Sin Pineapple Haze CiderThis tropical fruit is indigenous to South America. In the wild, pineapple plants can yield fruit for up to 50 years. Pineapple cores contain high levels of bromelain, an enzyme which can be used to tenderize meats. The sweet and tart qualities of this fruit balance well against the natural acidity of freshly pressed apples. 6% ABV

Circle Anthem AleTriple IPA made with over 10 varieties of hops in boil, dry hopped initially with Simcoe and El Dorado, then Eureka and Galaxy, and finally Citra and Mosaic. 10% ABV

Odell Peach StandThere’s nothing quite like the summer harvest of Palisade peaches. Peach Stand Rambler is our tribute to the hands that carefully tend those orchards. A Blonde Ale brewed to accentuate fresh Palisade peaches, this beer is refreshing and bright like a calm Colorado sunset. 5% ABV

Tupps Imperial Pastry Sour –  Brewed with Graham crackers, blackberry and red currant. With a touch of biscuit malt, graham crackers and loads of fruit, this one drinks like fresh baked pie on a warm summer day. We’re giving grandma a run for her money. 8.9% ABV

Turn and Face the Strange!

Well just paint me a young American and clock those breadwinner bags, mama. I was just ’bout ready to start betting for life on Mars. But y’all, it seems this thing that has sat on Amerika’s tortured brow for the past year has taken a shot to the arm. Just like yours truly.

I know you were just on pins and needles, but I got my first dose this past weekend. Have you? Those lovely folks at UT Health helped me get mine! And yes, I put a hyperlink to help you go get yours. It was super (insert your positive adjective here) and gave me the side effect of believing in humanity again. Not too shabby. Heck, if you’re confused or overwhelmed by the website, pop into the store and I’ll help you with it. Promise. If I’ve learned anything over the past year, it’s the kindness of strangers that’ll get us through this.

Anyhow, since papa don’t preach, let’s talk beer. You won’t lose any sleep over that. There’s a mess of new beer coming on tap this week! Check out the list below to get all the deets. Hop & Sting She’s Intense -The first in the Frog & Scorpion Limited IPA Series. It is a collaboration with the NTX Pink Boots Society Chapter. The recipe was formulated by and brewed by Betsi Good. This is a hazy has a complex malt profile to go with the 2020 Pink Boots Blend hops (Azacca, El Dorado, Loral, and Idaho Gem) with a touch of Ekuanot. The aroma is pineapple, mango, and peach, with a touch of pine. Finishes juicy sweet.. 8.5% ABV

Belching Beaver No Worries -No Worries IPA is the epitome of a true West Coast IPA, but with a twist of modern-day hops & aromas. This hop forward West Coast ale pours clear with a nice bubbly head. Aromas of dankness and tropical fruit jump from the glass. 6.2% ABV

Modern Times Star Cloud -There is simply no way to adequately prepare your taste receptors for the jaw-dropping deluge of flavor contained herein. Packed with financially irresponsible amounts of incredibly choice Citra, Cashmere, and Motueka hops, this hazy IPA is a miraculously tasty juice-bomb replete with notes of tangerine, lime, citrus, and tropical magic. It’s a seriously excellent combo that may leave you with an intense desire to high-five the can. 6.8% ABV

Bruery Meemaw’s Sticky Bun Stout -Dig into this bold barrel-aged imperial stout and experience a pipin’ hot plate of liquid sticky buns in your glass. This barrel-aged imperial stout is layered with pecans, maple syrup, and just a hint of cinnamon— imitating the warming flavors of freshly-baked sticky buns. This bakery is open for business.  10.2%ABV

City Orchard Mr.Green -Exclusively made from Rhode Island Greening apples, this cider is what green tastes like. 6.2% ABV

Jester King Citrus Froot Direct – They’re excited to introduce Citrus Froot Direct — Triple Dry Hopped Farmhouse IPA with Texas Dancy Mandarins & Hamlin Oranges! We brewed a dextrinous wort with raw wheat and flaked oats over a base of TexMalt San Jacinto 2-Row and Wildfire Pale Malt. We then pitched our mixed culture in stainless steel with a bio-trans dry hop of Ekuanot and Amarillo. Following primary, we refermented the beer with fresh, hand-juiced Dancy Mandarins & Hamlin Oranges from Orange Blossom Farm in Utopia, Texas west of San Antonio. We then dry hopped the beer two more times with Ekuanot and Sabro cryo before adding the hand-processed zest from the mandarins and oranges! 100% naturally conditioned in bottles and kegs. 6.6% ABV

Dogfish Head Mango Smoovie -Inspired by the fruit-based Indian drink lassi, Dogfish Head Mango Smoovie is a tart ale brewed with boatloads of mango and tangerine, lactose, vanilla, a touch of rose water and yellow cardamom. The result is a fruit-forward libation with sweet mango and vanilla flavor on the front and a subtle, warm spice finish. 6.5% ABV

Lagunita’s Waldos’ Special Ale -In 1971, the Waldos met one afternoon at 4:20 in the front courtyard of their school near the statue of Louis Pasteur. They set out in a ’66 Impala armed with a “treasure map” on a journey to find a secret garden near Point Reyes. They met there at the same time every day and continued their quest. They never found the secret garden….But they keep lookin’. The dankest and hoppiest beer ever brewed at Lagunitas was made with help of the Waldos for all treasure hunters. Cheers! 11.2% ABV

Fumees Blanches Rose -Les Fumées Blanches Rosé 2017 is a grey-coloured rosé wine with intense aromatic notes dominated by pink grapefruit, accompanied by redcurrant, pear and citrus. The grapefruit returns on the palate and there is a smooth and fresh mid-palate with a persistent finish and a subtle mineral touch. 12% ABV

Mas Janie Syrah-Grenache -Attractive deep red colour. Concentrated nose of black fruit, liquorice, complemented by fresh notes of strawberry and raspberry. Good roundness on the palate with plenty of suppleness in the mouth, the tannins are dense with an elegant structure. Aromatic finish with black fruits. 14.5% ABV

A to Z Pinot Gris -The A to Z Oregon Pinot Gris is refreshing and lithe on the palate. Aromas of Meyer lemon, lemon verbena, tangerine, apricot, peach, apple, pear, quince, melon and honeysuckle add a hint of sweetness to the air around it. The weight is impeccable with perfect balance and integration hitting all points of the palate. Incredibly versatile at the dinner table with flavors of golden apple, roasted coconut, citrus and pineapple appealing to the last splash in the glass. 13.5% ABV

It’s a jaw-dropping spectacle of liquid wizardry that encircles the taste buds and warms even the darkest corners of the soul. 7.5% ABV

Ingenious Infinity HoppedTriple IPA made with over 10 varieties of hops in boil, dry hopped initially with Simcoe and El Dorado, then Eureka and Galaxy, and finally Citra and Mosaic. 10% ABV

Belching Beaver Phantom BrideNamed after the ethereal song by the one and only Deftones, Phantom Bride IPA is a blend of Amarillo, Citra, Simcoe, and Mosaic hops delicately balanced for the perfectly drinkable mix of citrus and hoppy goodness. 7.1% ABV

Independence Cowboys From Helles – Light A tribute to Texas’ baddest band, this crushable lager comes at you like a beer out of hell. Helles is the German word for bright, “so out of the darkness and into the light, sparks fly everywhere in sight,” your thirst gets shredded like a Dimebag Darrell solo “cause high noon, your doom” and no sooner than your first sip, “the deed is done, Cowboys From Helles won!” 4.5% ABV

B-52 Super Smoothie PB&J -This Peanut Butter & Jelly inspired Imperial Sour is bursting with plum puree paired with a huge peanut butter flavor. It tastes exactly like a PB&J your mom used to make! 10% ABV

B-52 Vienna Lager -Traditional German Vienna Lager. 5.2%

B52 Wheeze the Juice -Rather than walk the more established road of West Coast IPAs, we’ve opted for “the one less traveled by.” Ours is a New England IPA. An IPA for Robert Frost and JFK. An Atlantic anomaly that lacks the bold (occasionally belligerent) hoppiness of its Pacific cousin. Instead, this is a juicy beer with a tropical aroma and gentle mouthfeel, free from the bitterness and bite that has made breweries like Lagunitas and Stone famous for their IPA. 5.5% ABV

Hopworks Giggle Nuggets Dank IPA – This IPA is so dank you’ll feel like it’s giggling at you with every sip you take. Brewed with Trident, Idaho 7, Altus, Chinook, and Columbus hops, Giggle Nuggets is packed with fruity, resinous hop flavors. ABV 7.5%

Big Storm Sunny Key Lime Fruited Wheat -Wheat ale brewed with key lime, is a true sip of Florida sunshine. Key lime puree straight from the Florida Keys adds a smooth taste and sweet Key lime aroma. Subtle wheat characters paired with the citrusy flavors of the Key limes makes this beer burst with flavor. 4.5% ABV

Big Storm Nitro Oats in Hose -Made with over 200 pounds of oats, this beer is a fun interpretation of an oatmeal stout. We use a strategic combination of Munich, Caramalt and chocolate malts with light noble hops to balance this complex flavor profile. The copious addition of oats in this mash lends to a creamy and smooth mouthfeel. Keep and serve as cold as hail! Available in 16 oz., 4-packs in local retailers, on draft in Big Storm taprooms and throughout Florida. 6.5% ABV

Big Storm Bromosa -We brewed the ultimate beverage for the bro (or sis) that isn’t into sweet bubbles served in pretentious, highfalutin glassware. BroMosa is a dry-hopped juicy IPA with a name that makes it socially acceptable to drink in the morning or anytime of day. Expect a strong punch of tangerine flavor followed by a dry and hoppy finish that even the self-proclaimed “IPA-hater” enjoys. 7% ABV

Blue Owl Little Gose Peach Cobbler -Our refreshing salty-sour wheat is perfect for your summertime shenanigans. Be on the lookout for these limited variations of Little Gose.This summer’s Little Gose is sour peach cobbler for the Liquid Bake Sale benefiting the Texas Craft Brewers Guild. 3.4% ABV

El Segundo VISIT El Segundo DIPA -Want to get away? If a small, tucked-away beach town is what you’re looking for, then you should VISIT EL SEGUNDO! Located just south of LAX, it has all the charms of “Anytown, USA,” with access to miles of beautiful sand and surf. While you’re here, be sure to check out El Segundo’s very own El Segundo Brewing Company and The Slice & Pint for some of the best beers and pizza Southern California has to offer. All this, with a nice touch of nostalgic Americana, it’s no wonder this little slice of heaven is called “Mayberry.” 7.7% ABV

Epic Creamside IPA -We used oranges plucked directly from our very own brown paper lunch sacks and milk from the cartons in vacant lunchrooms to brew this iconoclastic milkshake IPA 8.5% ABV

Fair State Big Doinks -Big Doinks is an extra dank IPA brewed with copious amounts of the stickiest hops available. 6.5% ABV

Fair Double Strata -Double Dry-Hopped Double IPA hopped exclusively with our hand-selected lots of Oregon Strata from Indie Hops. Massively tropical, with aromas of passionfruit, pineapple, citrus, and a waft of dankitude 8.6% ABV

Fair State Vienna Lager -Medium-bodied amber lager. Toasty, crisp bitterness, herbal hop nose. 5.3% ABV

Humble Forager Coastal Sunset V2 -Fruited Dessert Sour. This version of Coastal Sunset is based on the flavors in a cherry cheesecake. Rich flavors of tart cherries atop velvety smooth cream cheese, backed by crispy graham crackers, vanilla and a marshmallow topping, create this decadent sour.

Humble Forager Coastal Sunrise Breakfast Parfait -Strawberry, Blueberry, Raspberry, Honey, Granola, Lactose. Breakfast Parfait Sour Ale 6% ABV

Untitled Art Double Chocolate Fudgy Brownie -Heavy chocolatey fudgy boozy. 11.7% ABV

Untitled Art Imperial Seltzer Boysenberry Lime Smoothie -Smoothie seltzer with boysenberry, lime and vanilla. 9% ABV

Untitled Art New Zealand DDH Juicy IPA -Brewed with all New Zealand hops featuring Moteuka, Nelson Sauvin, Riwaka & Wai-iti. With flavors and aromas of fresh cut melon, strawberries and apricot. 7% ABV

903 Tiki Room Slushy -Berliner Weisse packed full of passion fruit, pineapple, coconut, and guava. 6.2% ABV.

903 Down With the Pastryarchy Strawberry Cake Cream Ale -Inspired by and brewed with the revered strawberry cake from Mom’s Bakery in Sherman, this cream ale is bold and whimsical with layers of strawberry and vanilla, imparted by hundreds of pounds of strawberry puree and vanilla. The additions of oats and lactose lend a thick body that gives the beer a cakey fullness. You can have your cake and drink it too. 5.3% ABV

Buffalo Bayou Bananas Foster -In a food coma induced by crawfish or steak few things in life are as delicious and decadent as bananas foster slathered over a scoop of vanilla. You know that feeling when you’re so stupid full you laugh when dessert comes then stuff your face anyway? 8.6% abv invented in n’awlins perfected in houston. They put it on a plate we put it in your glass. Drink up monkey it’s time to go bananas. Tasting notes: notes of fresh banana up front with a rich caramel mouthfeel and full-bodied dark chocolate finish.

Pinthouse Cosmic Nectar -Give in to the gravitational attraction created by this Juicy IPA, packed with an earth-shattering amount of Galaxy, Mosaic, Citra, Amarillo, and El Dorado hops. This star bursts with tropical fruit, juicy peach, and dank notes, complemented by a soft and pillowy mouthfeel. 7.5% ABV

Bell’s Oberon -Oberon is a wheat ale fermented with our signature house ale yeast, mixing a spicy hop character with mildly fruity aromas. Zilker Neon NoirLight and complex. Our new hazy pale has a soft pear and orange blossom aroma with sweet ripe citrus flavors. It’s dream-like qualities stem from the @crosbyhops – Strata and Citra, combined with @yakimachief’s – Simcoe, HBC 630 and Sultana hops. Neon Noir’s fluorescent visuals match it’s bright and refreshing experience. 5.5% ABV

Pinthouse Joe’s Magical Pis – A truly German style keller pils brewed with Heirloom pilsner malt and Loral hops, giving it beautiful herbal and floral hop characteristics, and a nice soft mouthfeel. 5.3%ABV

512 Whiskey Barrel Aged Double Pecan Porter(512) Double Pecan Porter is a robust porter accented by organic Texas-grown roasted pecans and subtly enhanced by aging in recently emptied oak whiskey barrels. Notes of chocolate, coffee and pecan marry with the subtle flavors of vanilla and whiskey to make this a wonderful warmer worth sharing and savoring. We sincerely hope you enjoy every sip. 9.5% ABV
