SPRINGTIME MAKES ME FEEL!!! Are you not stoked to see all this greenery popping up? From new leaves on trees, Biden Bucks in you bank account, green with envy friends over your vaccination status… heck, maybe you had a pint of green beer! You might have started to think Austin is looking a lot like the Emerald city these days. This wizard would agree with you.

So, Dorothy in the event we’re seeing the same things, I’d happily call you a friend of mine. But don’t go sleeping in a field of poppies girl!!! There’s too many cool new beers here at Whichcraft for you to come try. We’ve got nothing to hide behind a curtain. There’s a new brewery in, Boulder Brewing. They’re some of the OGs in the Hazy IPA movement. Plus, their packing will have you looking for a spare frame around the house. We’re also not sleeping on our draft game. By the end of the weekend I expect we’ll have 8-10 new kegs on… So you totally need to come pay us a visit!

Last Stand Craftsman Light -Light, Refreshing, & Crushable. 4.5% ABV

512 Juicy IPA -Owen pulled out all the stops and designed another amazing IPA, carefully combining Bravo, Galaxy, Citra, Mosaic plus a couple of organic New Zealand hops to form a citrus juice and fruit explosion like nothing we’ve ever done! Organic 2-row and a touch of crystal malt provide a light, but sturdy, backdrop for the flavors and aromas of orange, tangerine, vanilla, clean crushed citrus, stone fruit and passionfruit. It’s still clearly an IPA with a smooth and pleasant hop bitterness that cuts the malt and hop sweetness just enough to keep you wanting more. JUICY is hazy from hops with a round mouthfeel but crisp finish. 6% ABV

903 Spring Fest Marzen -903’s take on a classic German style Marzen. 7% ABV

903 Saturday Night Special -Saturday Night Special is a beer and brownie pairing in one. This oak aged imperial stout is loaded with notes of fudgy brownies, chewy chocolate, bittersweet malts and a chef’s kiss of sea salt. After a twenty-hour boil this stout’s black velvet body is thick and rich just like a fresh baked brownie. Saturday Night Special is sure to comfort you with its deep notes of cocoa and enthrall your senses with its delightful dance of sweet and salty. 13% ABV

Circle Pink Velvet -Pink Boots collaboration beer brewed by women to celebrate women in brewing. Hazy, velvety smooth mouthfeel, with powerful pine and citrus notes. 7% ABV

Tupps Imperial Pastry Sour -Brewed with Graham crackers, blackberry and red currant. With a touch of biscuit malt, graham crackers and loads of fruit, this one drinks like fresh baked pie on a warm summer day. We’re giving grandma a run for her money. 8.9% ABV

Brazos Valley Pancho IPA -Ekuanot Hop IPA. 6.8% ABV

Founders 4 Giants -We’ve made a lot of imperial IPAs over the years and, in turn, have had a lot of arguments over which one is the absolute best. So, to settle this once and for all, our brewers mashed up four of our favorite recipes into the ultimate imperial IPA. 4 Giants boasts aggressive bitterness balanced by a malty, sweet backbone while huge aromatics come courtesy of the seven American hop varieties. 9% ABV

Stone Viking Space Probe -In the spirit of all the exploratory missions deployed across the galaxy — be they spacecraft, Viking or other — we’re constantly probing the world of beer back here on Earth. That quest has brought us to this latest creation, which comes from our brewing team at Stone Brewing – Napa. With a haze reminiscent of some far-off nebula, and further complemented with the juicy flavors of Ella and Citra hops, this beer is most definitely out of this world. Crafted to be enjoyed on Earth, but if intelligent life does exist out there, we’re pretty sure they’ll like it too. 8.9% ABV

Lakewood Tangerine Queen -Tangerine Queen is a 5.7% wheat ale with orange peel and tangerine purée. During the hot summer days this is exactly what we want. A refreshing wheat ale with a tangerine kick. Comes in with bright citrus flavors and then finishes clean, crisp, and dry.

SLO Tio Rodrigo Michelada -My Classic Michelada is made with the finest natural ingredients and refreshing SLO Brew craft beer. It’s full of flavor with a slight kick, just like the traditional recipe from Mexico. 4.5% ABV

Alesmith Cloud Stream -You’ve just stumbled upon a beer so rich in hazy content that it had to be downloaded from the Cloud. Like a river of juiciness flowing from the heavens, this year-round hazy IPA is packed with dazzling notes of red currant, passionfruit, and mango. Alesmith Dual Exposure -Teaming up once again with our friends at Stone Brewing Co., we’ve brewed this super easy-drinking double India pale ale featuring hibiscus, as well as orange and lime peel. The beer is light in body and packed with tropical, citrus, and fruity notes from huge amounts of Citra, Strata, HBC 592, and Amarillo. When our two breweries join forces, your palate can’t avoid the dual exposure to flavor! 8.2% ABV

Alesmith KickBackRelax -Coming in at just 120 calories and loaded with juicy notes of grapefruit, mango, and coconut, this crushable IPA is light in body with a crisp, smooth finish. 4.2% ABV

Blue Owl Limetastico -As those warmer Austin days approach, the annual search for the perfect patio beer begins and with it our inspiration to brew just that. ¡Limetastico! is our sour Mexican Lager w/ lime & salt brewed with flaked maize, sea salt, lime zest, and Motueka hops. 4.6% ABV

Boulder Beer Bubbly by Nature IPA -Tropical and juicy like an IPA, crisp and easy drinking like a lager, and more fruit-forward and lively like a hard seltzer. This innovative union between three popular styles results in its own naturally Bubbly style. – 4.5% ABV

Boulder Beer Hazed & Infused -Brewed with a diverse mix of hop varieties, Hazed & Infused blends a piney, earthy, floral nose, with added fruitiness in flavor from the Simcoe. Although big hop aroma and flavor hit you up front, a relatively small early hop addition keeps the bitterness very low, making this hazy, deep golden-colored brew one of a kind. 5% ABV

Boulder Beer Mojo IPA -First packaged way back in 2003, this IPA from Colorado’s First Craft Brewery is anything but traditional. Mojo India Pale Ale was inspired by the English who first shipped their ales to India and the Far East – but brewed with an attitude of the great American West. Pale in color but packed with flavor, Mojo reflects the perfect balance of hop bitterness and malt character. The unique Amarillo hop creates a big, grapefruit-like citrus flavor and aroma, making Mojo a very zesty IPA that’s crisp and refreshing. 7.2% ABV

Against the Grain Citra Ass Down -American Style IPA brewed with Citra Hops. It is citrusy, sticky, hoppy and delicious. Simply drink it and enjoy it. Don’t hoard this beer, Citra Ass Down and drink it now.

OEC Brewing Aether -A pale ale brewed with wheat malt & oats fermented with our special wild yeasts. It is very lightly hopped during the boil and then dry hopped right after the primary fermentation with Hallertau Blanc & Loral. The dry hopping slows down the activity of the souring bacteria resulting in a very refreshing acidity complemented by the aromatics & flavors from the hops. 6%

Prairie Cocoa Berry Single -Sour Ale with Plum, Black Currant, and Blackberry. 5.2%

Bluebonnet Grapefruit Wit–  Based on David’s award-winning home brew recipe, the Belgian Wit is an annual crowd favorite. Perfect for a cool, clear spring day in central Texas.

Everything’s coming up Roses!

Now, it seems our winter of discontent is coming to a close. May we be ever hopeful that we spring ourselves into a glorious summer we all desperately need. As I write to you folks, it’s sunny outside and in the cool mid 60s.  I imagine it looks much the same for you outside your window, something truly delightful to behold. What a difference a year makes.

It was a year ago, but could also be chalked up in a day, that life so abruptly came to a halt. This will be one of those events that we will always remember. I was working at another establishment. I went in on a Monday morning and didn’t go back to work till late August. I’m sure you have your own bewildering story to tell.

But what kept me going when the uncertainty and fear ran high? It was community and passion, two core tenets shared with Whichcraft. While I didn’t go as so far to make my own sourdough starter,  there were a many long nights filled with good cooking and drink amongst my housemates and I. We took that rare chance to keep the dinner party on repeat and hold space to present with one another. Through adversity and doubt, we found peace.

We hope that Whichcraft gives you sense of community and feeds your passion for beer, and whatever else we might have come to mean for you. Just as you helped us get through lockdown and this tumultuous ensuing year, the same was always meant for you, from us. None of us can get through things like this without one another. So here’s looking to you, our spring of new starts.

New Wines This Week (On-Premise Consumption or Off-Premise Consumption)

Gorrondona Blanco 2019 Txakolina – Doniene Gorrondona is located in the tiny town of Bakio on the north Atlantic coast not far from Bilbao in the Basque country. Their txakolina is always one of our favorites with focused, mineral driven tartness but good flavor intensity. Clean and vibrant it’s delicious. 11.5% ABV

Grower Project 2019 Albarino – 100% Albarino. Black Water Draw Vineyard, Terry County, Texas. Racy & focused citrus and mineral driven palate. Perfect with seafood and warm weather. 12.8% ABV

Gorrondona Blanco 2019 Txakolina – This zippy, imminently crushable red wine is super fresh. Scents of soft berry fruits are interwoven with notes of hibiscus and wild fennel, finishing with juicy, gentle tannins. Owned by Florentino Martínez Monje, Luberri is located in Elciego in the heart of Rioja Alavesa. Florentino farms 35 hectares of old vines located principally between the villages of Elciego and Laguardia. A farmer at heart, Florentino was the original winemaker at Artadi before establishing his own winery in 1992. He made a name for himself and his estate by resurrecting the traditional style of semi-carbonic maceration of Rioja wine of Rioja. Florentino is very hands-on at the winery, participating in all aspects of production, but his true love is working in the vineyards. All the plots are farmed with minimal treatment of the soils and vines. Individual vineyard sites are fermented and vinified separately. By keeping yields low (around 34 to 45 hectoliters per hectare) Florentino extracts grapes with great concentration and flavor. 14.5% ABV

William Chris 2018 Cinsault  – William Chris Vineyards focuses on low intervention, 100% Texas-grown wine. Since 2008, winegrowers William “Bill” Blackmon and Chris Brundrett have expanded the estate vineyards and partnered with family-owned farms across the state to source only the highest-quality fruit.

Aged in neutral oak and cement. Prepared like a Beaujolais. Beautiful bright red color -looks like Christmas. Good funk/fermentation on the nose. Very light and fruity, juicy, mouth watering. The flavor disappears quickly, but there’s a lingering minerality which I like. A really elegant patio wine.  14.5% ABV

Areyna Lujan de Cuyo Malbec 2018 – Plum, berry and cassis aromas are a touch stalky. On the palate, this feels smacking and tomatoey, with punchy acidity raising the liveliness level. Spicy, slightly green-plum and berry flavors finish with a touch of oxidation.  13.9% ABV

12 Knights Portuguese Red Blend – Named after a group of 12 knights who fought for Portugal in the Middle Ages, the wine is a rounded and ripe blend of Touriga Nacional, Tinta Roriz and Alicante Bouschet. Its ripe tannins and generous spicy black fruits are immediately attractive and the wine is ready to drink.  13.5% ABV

Catena Vista Flores Malbec 2017 – Catena Malbec Appellation Vista Flores is composed of 100% varietal wines blended from vineyards of Vistaflores district in Tunuyán.  The result is a wine with a pure expression of a unique terroir. 30-year-old vines gives red and black fresh fruits flavors, sweet texture and  character. Cold nights lend bright, crisp acidity and the intense sunshine give explosive floral aromatics and concentrated structure.

The Catena Malbec Appellation Vista Flores shows a dark violet color with black reflections. The nose offers ripe, concentrated dark and red fruit aromas with delicate floral notes of lavender and violet, and mocha. The mouthfeel is rich and full with notes of sweet spice and a touch of leather. The finish presents soft, well-integrated tannins with bright, crisp acidity that gives the wine exceptional length. 13.5% ABV

Le Orme “16 Mesi” Barbera D’Asti 2017 – A selection from several vineyards in the South of Asti, with particular reference to the vineyards of La Court Estate and Montemareto in Castelnuovo Calcea, La Serra in Montaldo Scarampi and Costa delle Monache ad Agliano.  Fermentation in steel tanks. 10 days of maceration with the skins, with a soft “shower” system of wetting the cap at a temperature between 32°C and 27°C. Malolactic fermentation in steel. Nose: Elegant and intense, with notes of fresh mature red fruit, such as cherry and currant. Tasting Notes: Harmonious, with good structure and roundness, beautiful savoury finish. 13.5% ABV

Le Grand Caillou Sauvignon Blanc 2019 – This bright and light wine is lead by soft flavors of mango and pineapple. There is a fresher side to the exotic fruit flavors, with citrus acidity adding freshness. Drink now. 12% ABV

Hiruzta Txakoli Rose 2018 – Red currant-pink colour with rich aromas of red and black fruits, such as strawberries, blackberries and black currants, over a citrus background and fine vegetal notes. Very fresh in the mouth with a balanced acidity accentuated by a hint of carbonic gas, offering a pleasing palate and a long, aromatic finish. 12% ABV

Taken Chardonnay 2019 – Sourced predominantly from the renowned Napa Valley, this Chardonnay showcases the charm and essence of this region. A small portion of the fruit hails from Sonoma County, adding further complexity, resulting in a beautiful, intriguing, well balanced wine.

After being picked in the early morning hours, grapes were brought into the winery for processing. After undergoing 60% native yeast fermentation (82% fermented in French oak barrels), 50% of the wine went through malolactic fermentation, rounding out the palate and adding a delicious, creamy note. The wine was then aged in French and American oak barrels (30% new) for 9 months

“The 2019 Taken Chardonnay boast a beautiful nose of spice, citrus and lemon blossom. On the palate, Asian pear, grapefruit and Gravenstein apple are rounded out with hints of butterscotch and walnut. The mouthfeel is juicy, though not too heavy, with an uplifting, refreshing, crisp finish. Bright Napa Valley acidity is balanced out with creaminess coming from a splash of Sonoma fruit.”

14.1% ABV

Regaleali Nero D’Avola 2017 – Bright ruby-red color, this wine offers layered notes of cherry, mulberry and raspberry. On the palate, it is complex and supple, with ripe berry flavors framed by silky tannins. A delicious Sicilian red at a great value!

Fresh and savory, this elegant, crowd-pleasing red has aromas of red and black-skinned berry and culinary spice. Juicy and delicious, the lithe palate doles out succulent Morello cherry, crushed raspberry and star anise while polished tannins offer smooth support. It’s made to be drunk young, so enjoy soon. 13% ABV

Trefethen Dry Riesling 2019 – Vibrant and refreshing, this is the most transparent wine we make, a pure expression of our estate vineyards. We produced our first Riesling in 1974, made in a distinctively dry and crisp style. It has been a family favorite ever since. Bright and aromatic, it is marvelously food-friendly and cellar-worthy.

The dormant season was wet with much more rain than usual before the skies cleared in April, just in time for bud break. The weather in May was surprisingly cool and rainy again, slowing down the vine growth, and serving as a harbinger of the roller-coaster growing season that followed. The summer months alternated between warmer and cooler than average but, thankfully, the daily high temperatures rarely exceeded 100°F. September was warm and sunny, providing the perfect finish and all the grapes were in by mid-October.

Floral aromas of orange blossom and jasmine are complemented by fresh notes of green apple and grapefruit. On the palate, this bright, yet luscious wine evolves with flavors of nectarine, white peach, and Honeycrisp apple. The minerality and beautiful acidity provide an invigorating finish. 12% ABV

New Draft Beers This Week (On-Premise Consumption or Off-Premise Crowlers)

ABGB Hell Yes! –  An easy-drinking, all-season American craft beer. With a low bitterness level, light mouthfeel and crisp finish, this beer is supremely crushable and pairs well with just about any dish. 5.5% ABV

Austin Eastciders Brut-  Inspired by dry champagne and with only 3 grams of sugar, Texas Brut is a lighter and drier cider that will help get your year started off right. 5% ABV
3 Nations Mango Smash IPA–  They like to smash up the rules here at 3 Nations Brewing: instead of a Single Malt And Single Hop (S.M.A.S.H.) beer, we decided to stir it up a bit and use six hops, because why not? Bigger is better!
Huge notes of Mango, Pineapple and other tropical fruits dominate the nose on this bright, powerful IPA giving a sweet and cheerful aroma. Its medium body is crisp and effervescent, leading to a soft, dry finish tinged with a light but assertive citrusy bitterness. No palate wrecker here, just a big mango monster ready to smash your thirst! Try it with some spicy pepper jack cheese; some spicy Pad Thai or your favorite spicy Asian noodles! 6.9% ABV

512 Double IPA–  A Double India Pale Ale heavily hopped with over 4 lbs/bbl of Simcoe, Centennial, Chinook and Amarillo. This is a big, malty ale with delicate hop and rich malt aroma, complex hop flavor and sustained smooth hop bitterness. Hops are added from beginning to end during the brewing process and made using over 80% USDA certified organic ingredients. 8.5% ABV

Great Divide Nitro Velvet Yeti-  Introducing the smoothest member of the Yeti family, VELVET YETI. The surprisingly velvety and rich mouthfeel of the nitro pour rounds out the unmistakable roasty, caramel & toffee notes that make Yeti such a beast. Despite its minimal 5.0% ABV, this smooth operator is sure to provide maximum joy.
