Here’s your one chance, Fancy, don’t let me down…

This week we’re really living up to the adage “to thine own self be true,” honestly. The wheels of fate are turning, and mommas taking your taste buds uptown. Kings, Congressmen, and Aristocrats alike can agree that’s a good thing. As I’m putting these words down,  it looks like the guys are up to cleaning some draft lines… you that means something fresh and tasty is on its way. To boot, it looks like this nice weather is going to hold and the universe isn’t kicking the heat back on. That translates to mean come hang out with us in the beer garden!

On the beer front, it’s a knockout week. We have fresh drops from B-52 and Weathered Souls to keep you plenty busy. I’d also be remiss if I didn’t mention we scored a case each of Drie Fonteinen Framboos & Hommage. If you’re into lambics, you know. If you’re lambic curious, it’s a worthwhile investment in you’re new favorite category. I’m personally stoked for Symbol’s Hazy Red IPA, simply delish (***Chef’s Kisses***). Jester King has a new raspberry variant in its Mr. Mingo series. There is also some of the Forbidden Fruit barrel aged sour from Martin House in stock, your lucky day friend.

I’m very pleased with this week’s incoming wines. Let’s talk about the two selections from Wildmakers. Up to bat first is the Brias Cinsault. Just like its name, it’s a fresh breeze of a red wine. 100 year old vines, a vineyard 15km from the Pacific, and granite schist soil imbue the juice with salinity and earthiness. But that’s all backed up with bright notes of cranberry and cherries (very quaffable). Their other offering, Sabatico, will give you that much need respite from life. Clocking in a touch higher in the ABV & body category, this one is much more apt for the cooler night and richer meals headed our way. The bolder tannins meld well with the rounder body, think jammy prunes with an herbaceous back bone. Simply mesmerizing. The Embruns french white and Elisa Guerin Moulin à Vent are two big boys for something special, perhaps a Wednesday night pizza party with friends?

Get ready to pull out that day planner, we got events coming your way! Next Friday, the 1st, we’ve got Willard’s Brewing in for a pint night and they are the next month’s brewery of the month. The following week Lone Pint is in on the 7th with their El Cuero golden stout. Can you say YUM??? Lastly, I’m excited to announce our first ever WINE TASTING!!! I appreciate many of you hearing me talk about this program and its finally here. Our friends at Violette Wine Co.  will be showcasing some wines from fantastic Chilean producer Escándalo. I hope you’ll make it out to all of them.

We’re excited to announce that Thirsty Planet’s Spot on Pils, Thirsty Goat Amber, and Buckethead IPA are all part of our Brewery of the Month for September. Coming in at $8.99 for a six pack, they’re quite the deal!

With poor mama’s voice ringin’ in your ears
“Here’s your one chance, Fancy, don’t let me down”
We better see ya real soon!

Later, y’all.

These bottles are then stored in our cellars for at least five months so that the raspberry lambic can develop into a beautiful, traditional, and vibrant Framboos. With a abundant forest fruit nose as it warms in the glass, 3 Fonteinen Framboos will age perfectly but may lose some of the vibrant colours and forest fruit aromas. 6% ABV

Drie Fonteinen Hommage – 3 Fonteinen Hommage is the result of macerating hand-picked whole sour cherries and raspberries on young lambic for at least four months, in a proportion of 760 to 800 grams of raspberries and 200 to 240 grams of sour cherries per litre of lambic. This fruit lambic is then blended again with more lambic to obtain a minimum intensity of 35% fruit. Hommage is a bodied raspberry lambic beer, with an intense deep red forest fruit bouquet. New Wines This Week

(On-Premise Consumption or Off-Premise To Go)

Cono Sur Chilean Chardonnay – This Chardonnay, made from organically grown grapes, bears the spirit of the estate workers, pedaling their way to our vineyards each day. From the start this is an engaging wine, with its yellow color and golden hues and refreshing nose, very citric with fruity aromas and light mineral notes. The palate is seductively complex, very fresh, with a well-balanced acidity. This Chardonnay is undoubtedly young and friendly. 13.5%ABV

Zazou Picpoul de Pinet ’19 – The French know a thing or two about making wine. They’ve been doing it for centuries and sometimes they keep their vino knowledge a little too close to the vest, but we’ve got the lowdown for you on this v cool indigenous French grape. The coolest fact about this wine is that “Picpoul” literally translates to, “sting the lips,” (*enter several Anchorman jokes*).

The grape got its name because the wine is high in acidity, which means it’s refreshing and tart as you sip on it while hoping for a short winter. This bottle makes for a great aperitif but also goes particularly well with salty dishes, especially seafood or charcuterie. In France, it is most often served with oysters — so make like the French and get shucking. 12.5%

Elio Filippino Arneis ’18 – The bouquet is fruity with hints of chamomile and acacia. Full, fresh and elegant taste. Ideal serving temperature is 10°-12°C. Excellent paired with fish or white meat.

Wildmakers Brias de Guarilihue Cinsault – A fruit bomb in the nose, this energetic wine reminds us of fresh prunes and cherries combined with light touches of herbal spices such as mint and rosemary. A fresh, dangerously easy to drink wine with supple, soft tannins and a juicy finish.

The winemaking process focuses fully on fruit preservation and varietal character. Not too much skin contact, just enough to get that gorgeous purple coloring. Light pump overs and early pressing, never touching oak. Pure fruit juice for enjoying the simple moments in life. 12.5% ABV

Wildmakers Sabático – A Cariñena and Garnacha blend that is lively and complex, with aromas that evolve as it breathes. We often get whiffs of tobacco leaves, potpourri and jammy prunes ending with a hint of chocolate mint. The mouth shows great balance between thick, concentrated tannins and a soft, round body.

The winemaking process is straightforward: spontaneous fermentation with native yeast in a mix of concrete vats, clay amphorae and open barrels. No sulphur is added upon reception. Both varieties undergo regular punch-downs and a few light aerations. The Garnacha is pressed early in the last quarter of fermentation, while the Cariñena soaks with skin contact for around 40-50 days. The Garnacha is the nose and tension, Cariñena the body and length.

The wines then age in 600-liter French oak barrels for 18 months. At 8-12 years old, the barrels simply act as a live container in which the wines can build character. 14.5% ABV

Elisa Guerin Moulin à Vent Les Thorins – From up and coming winemaker, Elisa Guerin, come terroir driven gems from a classic appellation. She grows organically with 80yr old vines on Gorrha soil. Half whole bunches, half de-stemmed, and part carbonic maceration in concrete. A bright & fruitful red that has the structure to go that extra mile, you’d be hard pressed to better for an all-rounder with such life. 13% ABV

Le Quai à Raisins Embruns – GRAPE VARIETY & TERROIR: 100% Macabeu on Pyrenees fluvioglacial alluviums

THE VINES: Parcels located in Corneilla-la-Rivière (Pyrénées Orientales). Organically and biodynamically farmed (in conversion towards Biodyvin). Harvested by hand.

WINEMAKING: Direct press. After the must has settled, the wines are fermented with indigenous yeasts in French oak barrels and stay on lees for 12 months.

TASTING: Orange tree blossom and flintstone aromas. Dense mouthfeel with toasted brioche notes and a mineral finish.

WHEN TO DRINK: Gastronomical white wine with good ageing potential. Pairs well with poultry and fish. Make sure to keep some for the cheese platter!

13.5% ABV

Bordatto Etxaldea Basa Juan Cider – Basa Jaun is a lightly sparkling natural cider produced with a blend of 19 different organic, heirloom apple varieties grown on their land and indigenous to the French Basque region in the foothills of the Pyrenees Mountains. Basa Jaun, named for the “wild man” of Basque mythology, is a hearty, acidic cider with the complexity associated with grape wine. It is bottled before alcoholic fermentation is complete, finishing its fermentation in bottle, lending Basa Juan it’s characteristic pétillance.  Basa Jaun is delicious when young, but is best appreciated after a few years of bottle aging, having the ability to improve in bottle for five or more years. As the primary notes from the fruit drop out, the ciders become more vinous, with complex aromatics and pronounced tannins that leave one reaching, inevitably, to descriptors more often associated with fine wines.

2015 was a warm vintage and early harvest in Southern France, which benefited native apple varieties with high natural acidity to develop full and complex fruit and aromatic profiles. It was a good vintage for producing ciders built to age. 6% ABV

Trabanco Poma Áurea Sparkling Cider – Poma Áurea is a totally natural cider, a brut nature in which both carbon dioxide and sugar are endogenous, i.e. the result of the fermentation process itself. In the mouth it runs smoothly, leaving a very harmonious and quite dry memory, with notes of wood. 6.5% ABV

Wölffer Estate Red Cider – Our Wölffer No. 139 Ciders evoke the style, sophistication, and spirit of summer in the Hamptons. Made to round out our No. 139 Cider portfolio and inspired by our elegant red wines, this Red Cider is lightly sparkling and beautifully aromatic. 6.9% ABV

New Draft Beers This Week

(On-Premise Consumption or Off-Premise Crowlers)

Austin Beerworks Super Awesome Helles A super clean, super easy to drink, super sessionable, super hard to make lager. It takes us 8 weeks to ferment this special beer because there is absolutely nothing to hide behind. While most Germans would tell you Helles means light or bright — we know the true translation is “Hell! Those bearded Americans just out-brewed us!” 4.5% ABV

Einstok Icelandic White AlePure Icelandic glacier water and a classic witbier recipe combine to create our Icelandic White Ale. Crafted clean and crisp, the balanced addition of orange peel, coriander, and rolled oats ensure this beer remains incredibly flavorful and refreshingly drinkable. 5.2% ABV

Roughhouse Honey CrumbFarmhouse ale brewed with locally baked rye bread and TX wildflower honey. Crisp, dry and malty! 4.5%ABV

Lakewood Punkel – Is there a better fall treat than pumpkin pie? Nope, which is why there are so many pumpkin beers out there. It’s also why ours is based on the dessert, not the gourd. Their twist: Punkel has no pumpkin. It’s a dark, malty German lager but with a lighter body enhanced by cinnamon, allspice, nutmeg, and ginger. Because who doesn’t like a little trick with their treat? It’s the perfect session beer for those fleeting cool Texas days spent watching the grackles fly south to their favorite grocery store parking lot. 5.5% ABV

903 Space WranglerDouble Dry Hopped IPA. 7.3% ABV

(512) Larry Mango IPALarry the IPA was created in homage to a longtime friend and contributor to our success. Larry (the man) is more than just a contractor, he’s part of the team and part of the family. Yes, like any smart friend of the brewery, he shows up to drink beer with us often, but he also shows up to work events without being asked and will lend a hand no matter the task. He’s from that generation of people who help when they see the chance. Larry was one of our first “converts” from American light lager to IPA, so it only seems fitting to name our newest creation after one of our IPA’s biggest fans and one of our dearest friends. Take a moment to meet Larry. With loads of character and a fruity, citrusy hop punch that stands solidly on a gentle malt foundation, Larry the IPA is both sturdy and light, refreshing and satisfyingly hoppy. Hops: Loral, Simcoe, Cascade & Citra. Featuring mango! 5.6%ABV

Zilker Fruit FestWe’re talking all kinds of fruit here – our newest sour is packed with dragon fruit, passion fruit, orange, pink guava and pineapple. Aka POG juice with a tropical twist! Oh it’s a heartache when love comes to an end…

Especially when you come to that last can of beer or bottle of wine, even though your heart breaks, you know it’s gonna mend… cause here at WhichCraft we help keep the faith right through goodbye. This week we haven’t skipped a beat. So, pick yourself up off the ground and walk on down.

***New Brewery Alert***
We’re excited to bring two new options from our friends up in Pflugerville, Willard’s Brewery. Their tasty Fistful of Furry Hazy IPA and Forbidden Helles are coming in fast and furiously delicious. A big shout out is in order for 512 Brewing! They’ve joined the canning club with their Kölsch. We love those folks, and we love that their beers are now super pool & lake friendly! On the hoppy front,  we’re stoked for Tupps’ new Hella Hopped West Coaster, and don’t miss that Fair State & Pinthouse collab, Hazy, Art & Agriculture. To keep that pesky doctor away make sure you grab some of Martin House’s Honey Crisp Ale (totally healthy).

I feel like I’ve really out done myself with this week’s wine. Top of my list is the Piak! from Domaine Bobinet. Its 100% Grolleau & 100% the strawberry fields that we need everyday forever. Take one sip, and try not to smile. Working on your cellar you say? Well partner, you better grab a bottle of the Dos D’Chat Jura Chardonnay. Four cases were sent to Texas. We snagged only six bottles outta that shipment. This wine ain’t your Kendall Jackson. It’s beautifully complex with a lovely nuttiness. It’ll also age quite tremendously in that cellar you’re stocking. If you’re looking for a fun first step into natural wines or wanna try something a touch more complex, Amplify Wines Mixtape white wine blend will give the same feelings as that Smiths & The Cure playlist from your highschool sweetheart. I’m getting all kind of tropical notes and lip smacking qualities that have me coming back glass after glass. La Milla Albriño is definitely my deserted island sipper. Go check out my Insta post on it to see what else I think about it. The other newbs are fun too, but why don’t you come in and talk with us about ’em?

***Other wine news*** Buy any 6 bottle, get 10% off. Get any 12 bottle and get 15%. We’ve got the cool stuff you need to get.

Mark your calendars for the 17th: our friends over at Celis will be stopping by for a visit. We currently have their Pêche on draft, and well… it’s a peach.

We’re excited to announce that Thirsty Planet’s Spot on Pils, Thirsty Goat Amber, and Buckethead IPA are all part of our Brewery of the Month for the end of August and through September. They’re all coming in at $8.99 for a six pack!

Don’t just stand there in the storm
Walk toward the light till you find the sun
And you’ll be better off in the long run
And walk on to WhichCraft

Alesmith Aleschmidt Oktoberfest – This classic German-style amber lager has been brewed in Germany and Austria for hundreds of years, though it was made famous for being served at Munich’s Oktoberfest celebration since 1872. Our take on this classic is characterized by a clean, elegant, and toasty malt character. Prost! 5.5% ABV

Fair State Art & Agriculture – Hazy IPA collaboration with Pinthouse Pizza (Austin, TX) that celebrates Mosaic hops. New Wines This Week

(On-Premise Consumption or Off-Premise Crowlers)

La Milla Albriño 2018 – Rías Baixas represents the lowlands of Galicia, with an elevation generally less than 300m near the sea and the lower reaches of the rivers, giving the region a distinct Atlantic influence with mild temperatures and high rainfall. Here, Albariño finds its natural habitat. La Milla is a cuvée made in collaboration with third generation winegrower and winemaker Angel Parada. It is sourced from an organically and biodynamically farmed plot of old vines (up to 80 years old) in the sandy soils of the Soutomaior subzone of Rías Baixas. After hand harvesting, spontaneous fermentation and aging occur entirely in stainless steel tanks

This Spanish gem of a grape has thick skins and is disease resistant, meaning it can thrive in Galicia’s humid, rainy, oceanic climate. Often planted in sandy soils near the ocean, the resulting wines often display notes of salinity. This La Milla bottling from Viños de Terruños is textbook, classic Albariño: ripe citrus and stone fruit, refreshing acidity, stony minerality, and is just to die for. Pair with shellfish, crab-crusted cod, or pan-asian cuisine. 12.5% ABV

Amplify Mixtape White 2020 – This year’s Mixtape white is 58% Chenin Blanc, 21% Riesling, 15% Gewurztraminer, and 6% Viognier, all organically farmed. Half of the Chenin Blanc, and all of the Riesling, was fermented to dryness on the skins, and all of the fruit received at least 2 hours on the skins. It is drier than the 2019, which had a touch of sweetness, and we find it to be more balanced overall. The Gewurztraminer lifts the nose, providing floral top notes, while the skin-fermented portion brings more exotic aromatics. Texturally it has beautiful weight and roundness, a result of full malo and no fining or filtering. This is a wine we want to drink all year long, and it should complement a wide array of foods. 13% ABV

Le Dos D’Chat Côtes du Jura Chardonnay 2018– A wonderfully textured and lightly nutty Jura Chardonnay that’s on the fresher side right now, but will develop quite nicely in the coming years. 12.5% ABV

Ciu Ciu, Lacrima Di Morro D’Alba 2018– So-named because the current owner’s great grandfather worked for the local railway company, this 150 hectare organic estate was established in 1970 in Contrada Ciafone on the Adriatic coast of Le Marche and is now under the direction of brothers Massimiliano and Walter Bartolomei. The vineyards lie among the rolling hills of the countryside in Le Marche’s Offida region where the proximity to the Adriatic, combined with 300 metres of altitude create a unique micro-climate which ensures exceptional growing conditions. Lacrima di Moro is a DOP red wine from Ancona in Le Marche and is made from the ancient and rare Lacrima grape, rarely found outside the locality. It is aged in stainless steel tanks for 6 months and has a vibrant acidity.
