Operation Advent Box 2021 was a COMPLETE sucess this year!!! We ended up selling out of them by Friday evening. They are happily awaiting pickup if you have a pre-order. Besides the extra golden ticket box we put into the mix this year, we have an Instagrtam contest for y’all to participate in. We will be closed tomorrow for Thanksgiving day, and opening at noon on Friday. Otherwise, we’ll be here for regular business hours. That means you have until 10pm tonight to stock up on all those crucial beverages!!!

This Saturday, November the 27th, the folks from Weathered Souls will be in house for a TAP TAKEOVER  to celebrate their anniversary. We’ll have Hop Homies, Rum Barrel Rainbow Sherbert, Teamwork Makes the Dream Work Double Imperial Stout, and References You Don’t Understand Imperial Coffee Stout on tap. You won’t be able to find these bad boys anywhere outside of the brewery. Look out for some more wine tastings in December; our friends from Republic National are in on the 3rd, and David Mayfield Selections will be here on the 18th to highlight the exciting things coming from Les Lunes wines of California.

For our November Brewery of the month, we are happy to announce that it’s the fine folks from Texas Beer Company! For JUST $8.99 a six pack we have their Pecos Amber, K9 Lager, and Hoppy Duck IPA.

Texas Keeper Honey Thief – Cyser is the love child of cider and mead, made by fermenting apples and honey. Honey Thief is made from Rome Beauty & Northern Spy apples double fermented with our own Texas Keeper estate honey. The result is a brilliant combination of orange blossom, honeysuckle, jasmine, crisp apple and nectarine. The Cyser was delicately back-sweetened with a touch of Texas wildflower honey adding a slight silkiness to the finish. Pairs perfectly with duck, pork, shrimp and crab. 7.2%ABV

Roughtail Migrating Coconuts – Making an incredible beer isn’t always an exact formula and sometimes you can end up on a pointless venture. However, occasionally you brew what you might feel is the holy grail of beers. Migrating Coconuts is the newest addition to our seasonal lineup. This Imperial Porter boasts a roasty, nutty goodness with a rich accompaniment of toasted coconut and sweet vanilla. 7.8% ABV

Ingenious Double Galaxy – Juicy New England style double IPA with Galaxy hops. 8.2% ABV

3 Nations Pecan Pie Porter – Lighter than our stout series, this beer is moderately bitter with roasted pecans and a buttery pie crust. 6.7% ABV

Nebraska Gimme S’more– We’re fans of the great outdoors and one of the things that makes the mind wander to thoughts of camping is a great fire and S’Mores. We’ve taken a newly formulated Brown Ale and blended in a perfect amount of vanilla and created the equivalent of a S’More in a pint glass! While there is no actual chocolate or marshmallow in here, you’ll be hard pressed to convince your senses that they’re not. 5.2%ABV

Great Divide Peach Milkshake IPA – Tis a peach milkshake IPA. 6%ABV

Canarchy VII Doomberry – A crushable blend of berries that’s relentlessly flavorful, ruthlessly juicy and infused with electrolytes. A bigger, badder, seltzer than the norm at 7% abv, it will leave you lusting for more.

Lagunitas Unrefined Shugga – This new iteration of Shugga’ has all the rich, winterly-warming flavors you know and love from our fan-fav seasonal sweet release, with a fancy upgrade—Whole Cane Sugar added to the brew. Along with this sweet update comes a new name: Unrefined Shugga’. 10%ABV

Left Hand White Russian Nitro – Indulge in a devilishly delicious stout. Inspired by the famous German dessert, Black Forest Nitro tempts taste buds with tart black cherries and aromas of rich chocolate cake. Layers of flavor reminiscent of spiked fresh cherries and dark chocolate ganache cascade on a canvas of nitrogen. The super smooth mouthfeel is delicate and light while staying diabolically decadent. Crack a can and enter into temptation. 7.7% ABV

Samuel Smith’s Winter Welcome – This seasonal beer is a limited edition brewed for the short days and long nights of winter. The full body resulting from fermentation in ‘stone Yorkshire squares’ and the luxurious malt character, which will appeal to a broad range of drinkers, is balanced against whole-dried Fuggle and Golding hops with nuances and complexities that should be contemplated before an open fire. 6%ABV

Stone Xocoveza– A Mexican hot chocolate inspired stout. Intense cinnamon, cocoa and coffee are followed by nutmeg and peppers. As the beer warms up, the flavor combinations evolve and the cocoa and vanilla notes really start to open up. 8.1%ABV

Left Hand S’mores Milk Stouts – Stout with cacao and toasted marshmallow 6%ABV

Wild Acre Gingerbread Snap’d – Snap’d is an American Strong Ale, treated with an in-house spice blend to achieve the characteristics of a traditional holiday gingerbread. 8%ABV

Dutchess Ales Walser Pale Lager – Walser Alpine Lager owes its inspiration to the crisp mountain Lagers of the Swiss Appenzell.  Rich golden in color with a delicately balanced profile of German Pilsner malt, two varieties of Munich malt, and Spelt.  Hopped with choice Hersbrucker, Tettnanger & Hallertau Tradition – meadow herbs and subtle spicy floral elements marry fait notes of juniper and candied citrus. 4.8%ABV

Dutchess Ales Augur Porter – Augur is our classic English Porter with a touch of East Coast nuance.   Brewed with the finest Maris Otter, a variety of roasted barley and wheat malts as well a varied spectrum of crystal malts.  A dry, crisp and satisfying mouthful of proper ale with a dash of toasty biscuit and cacao.  Hopped with Willamette, Glacier and Crystal hops for woodsy, fresh presence 4.6%ABV

Equilibrium Fluctuation DDH DIPA – Fluctuations from the sun hurl particles of plasma towards earth and create the dramatic display known as the Aurora Borealis. Fluctuation is our 8.1 % DIPA that releases bright tropical notes of passion fruit, mango, pineapple, and lychee with an undercurrent of sorbet and cream. Fluctuation tastes highly resinous and tropical with an assertive yet soft bitterness and our #EQjuice finish. Fluctuation features the Aurora Borealis, illustrated by local artist, Julia Green. 8.1% ABV

Equilibrium Fractal Mosaic – Fractal Mosaic is the first release from our small-batch Research Series. A fractal is something simple at the core yet can produce wonderful and amazingly complex results. The fractal series will have only pale malt and a single hop (simple). We will use these beers to investigate how different hops manifest through our processes, allowing us to optimize both our use of hops and our hopping techniques. Fractal Mosaic pours a resinous-hazy-straw yellow releasing complex aromas of dank citrus, earthy grass, tropical melon, and a hint of berries (complex). The taste is highly resinous, piney, juicey, with a slightly creamy mouthfeel, and a firm but rounded bitterness. The medley of characteristics makes the name “Fractal Mosaic” warranted indeed. 6.8% ABV

Equilibrium MC3 TIPA – The evolution is here and we are excited to bring it to you. MC³ breaks the laws of physics and implodes reality. Our flagship DIPA ‘MC²’ is photon’s hopping rate SQUARED, this TIPA is photon’s hop bill CUBED. Where Photon explodes into a rainbow of flavors, our first ever Double Whirlpool (DW) creates a rainbow of flavor that gets focused back to a singular stream of deliciousness as the next step in this energy evolution. This unique DW works synergistically with the appropriate Energy DH treatment.

MC³ is basically MC² on the maximum permissible dose (MPD) of steroids. Extremely bright citrus, big mango, and assorted melon aroma and flavors. A dense hop saturated mouthfeel from our Double Whirlpool coats the tongue and our EQ juice is amplified by our Energy dry-hop methods to near cosmic boom levels. 10% ABV

Equilibrium MC2 DIPA – mc² is Photon’s big brother. We literally took Photon’s hopping rate and squared it. This DIPA is our tribute to the amazing relationship that energy and mass are balanced, proportional to the speed of a photon squared. It pours a hazy tangerine color, releasing bright tropical notes of mango, pineapple, and apricot. mc² tastes like succulent mango juice loaded with chewy hop resins. It’s very drinkable for 8.0%; be careful, this one can sneak up on you

Equilibrium Light At The End Of The Tunnel – Light At The End of The Tunnel uses Photon as its inspiration with some modifications and upgrades including an all Survivable hop blend for the whirlpool and a large dose of Lupomax Citra in addition to a supersized Photon hop bill. Aromas and flavors of soft pineapple, navel orange, stone fruit, EQ’s rainbow melon, and lime juice radiate with a touch of pine resin at the finish making this beer an easy drinking accompaniment to celebrate the fact that we hopefully have the finish line in site. 6.8% ABv

Tilquin Gueuze L’Ancienne – The Gueuze Tilquin à l’ancienne (7.0% alc / vol) is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon.

The taste is tart and dry but has a certain roundness that makes this Gueuze à l’ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose.

Tilquin Oude Mirabelle – During this season 20|21, we blended a new fruit beer, the Mirabelle Tilquin à l’ancienne 7.0 % alc. (available in 37,5cl & 75cl), which is is made from the fermentation of 240 g of Mirabelle plums by liter of lambic. 7% ABV

Tilquin Rullquin – Made with central Texas wildflower honey

Odd Side Ales Marshmallow Coconut Hazel’s – Imperial stout aged in bourbon barrels with coffee, coconut, natural hazelnut and toasted marshmallow flavorings. 11% ABV

Odd Side Ales Mayan Mocha BBA – Inspired by Mexican hot chocolate. It is carefully blended with Dutch chocolate coffee, cinnamon, nutmeg, and habaneros which will leave you with the perfect balance of chocolate and heat. 11% ABV

Martin House Puppy Chow – Stout with Peanut Butter, Chocolate, Powdered Sugar, and Chex. 8% ABV

Martin House Delilah – Cran-Raspberry Sour. 10% ABV

Tupps Ugly Sweater Holiday Spice Amber Ale – Amber ale brewed with holiday spices. 5.2%ABV

Elgin Meadery Cyser Aromatis – Made with central Texas wildflower honey

 

New Wines This Week

Caruso e Minini Catarratto 2018 – Located on Sicily’s western-most coast near the town of Marsala, Caruso & Minini boasts a history that harks back to the late 1800’s when Antonio Caruso bought the company to grow grapes for the nearby Marsala factories. The company was passed through subsequent generations until Nino Caruso finally decided to begin making and bottling his own wine in the mid 1900’s. In 2004, Stefano Caruso joined forces with Mario Minini of Lombardy to launch the present-day winery, producing wines from indigenous Sicilian varietals such as Catarratto, Nero d’Avola, Frappato, Inzolia, and Nerello Mascalese. Today, Stefano’s daughter Giovanna works closely with her father to head up this historic winery.

Fresh and clean. Elegant and balanced fragrance that ends in a mineral and long finish. Pair with a simple lemon pasta, white meat or stand alone as an aperitif.

Bright straw yellow. Perfumed aromas of ripe tropical fruit, white flowers and lime. Bright and crisp but with a suavem rich mouthfeel that coats teh palate with previse Catarratto Lucido flavors of apricot, lime and herbs. Closes long dense and multilayered with a pungent floral quality. An absolutely knockout Catarratto, very likely the best I tried this year. Native yeasts and stainless steel only. Though the label doesn’t state so, this is 100% Catarratto Lucido. 13% ABV

Hamilton Russell Ashbourne 2018 – A blend of 80% Sauvignon Blanc and 20% Chardonnay, the 2018 Sauvignon Blanc Chardonnay opens to a Sauvignon Blanc nose with the added richness of the Chardonnay to round the edges of the greenness associated with Sauvignon Blanc. While the notes of green bell pepper are present in the glass, there is a sweet caramel-apple tone hiding just under the grapefruit tones, becoming more evident on the palate. The wine is medium-bodied and has a slight touch of sweetness on the palate, as this does have almost two grams of residual sugar. It ends with a simple finish that lingers with tons of juicy pears and grapefruit.

Palivou, Anemos, Agiorgitiko 2020 -A deep-colored purple wine with intense fruity and clean aromas and the dominated flavors of cherries, strawberries and gooseberries. The silky mouthfeel and the grape juice aftertaste give the impression that you are tasting grapes from the vineyard during September.13.5%ABV

Les Enfants Sauvages “Che Chauvio” Rouge – “Che Chauvio” is a phrase from the Occitan dialect meaning “If you knew” because it is so atypical, if you only knew where it comes from… This wine comes from 3 vineyards (2 plots of Cinsault and one plot of Syrah).

Syrah is pressed to tank / Cinsault is harvested at ripeness and added (whole-cluster) to the Syrah mid-fermentation for 3-5 / racked and pressed and finished in stainless steel. 11.5% ABV

Georges DuBoeuf Beaujolias Nouveau An intense, brilliant cherry colour with purplish tints. Complex nose with red and black berry aromas. A smooth wine with fine tannins, harmonious and complete. Ideal for all occasions, from aperitif to cheese. 100% Gamay 12.5%ABV

Saloon Door Persnickety Citrus WheatCitrus Wheat. A zestiful festival. A bumper crop of citrus, fruit peel and all jam packed on the quantum level into each glass. This beer is summer vacation. 6.51%ABV

Saloon Door Texas Coast IPA8% ABV Imperial/Double West Coast IPA.

Zilker Utopian Hazy Pale Ale- Tropical, crushable Festival Ale 5.3%ABV

Symbol Caramel Apple SourThis time we have a Caramel Apple Fruited Sour. Reminiscent of your favorite fair treat, the sweet, and tart flavors will transport you to the top of the Ferris wheel. 4.8% ABV
