Everything’s coming up Roses!

Now, it seems our winter of discontent is coming to a close. May we be ever hopeful that we spring ourselves into a glorious summer we all desperately need. As I write to you folks, it’s sunny outside and in the cool mid 60s.  I imagine it looks much the same for you outside your window, something truly delightful to behold. What a difference a year makes.

It was a year ago, but could also be chalked up in a day, that life so abruptly came to a halt. This will be one of those events that we will always remember. I was working at another establishment. I went in on a Monday morning and didn’t go back to work till late August. I’m sure you have your own bewildering story to tell.

But what kept me going when the uncertainty and fear ran high? It was community and passion, two core tenets shared with Whichcraft. While I didn’t go as so far to make my own sourdough starter,  there were a many long nights filled with good cooking and drink amongst my housemates and I. We took that rare chance to keep the dinner party on repeat and hold space to present with one another. Through adversity and doubt, we found peace.

We hope that Whichcraft gives you sense of community and feeds your passion for beer, and whatever else we might have come to mean for you. Just as you helped us get through lockdown and this tumultuous ensuing year, the same was always meant for you, from us. None of us can get through things like this without one another. So here’s looking to you, our spring of new starts.

903 Raining Marshmallows Slushy -RAINING MARSHMALLOWS this batch is packed full of blueberry, raspberry, banana, marshmallow, and vanilla. 6.2% ABV

903 Frost Daddy Slushy -Fruited Kettle Sour. Frost Daddy is loaded with blackberry, blueberry, black currant, raspberry, mango, and marshmallow.

903 Moosesicle Slushy -Cara Cara, Orange, Vanilla, and Marshmallow Berliner Weisse Style Ale!! Packed with more fruit than we’ve ever put into a beer!

No Label 1980 Kolsch -This ale delivers a clean, crisp and perfectly balanced flavor with a moderately light note. Soft with a slight fruit and honey-like sweetness including a light hop bite, and rounds out in a clean, but dry, finish. 5.25%

NOLA Optimystical – A sour India Pale Ale dry-hopped with Galaxy & NZ Cascade hops. This delicious beauty is bursting with flavors of mango, peach rings & candied peaches. 5.3% ABV

Humble Forager Coastal Sunshine -Coastal Sunshine is brewed with barley, spelt, red and white wheat before souring with Forager Brewery’s lactobacillus blend. Fermented atop mouth watering passion fruit, drippy mango, ripe guava and juicy pineapple. This sour ale will transport you to a tropical paradise, no matter the season. 6%

Jester King Less Dots -Less Dots is a farmhouse ale aged on the “spent” black currants from Jester King More Dots. 5.7%

Spencer Trappist Ale -This recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma. 6.5% ABV

Spencer Trappist Monk’s Reserve Quad -Spencer Monks’ Reserve Ale is a classic Trappist Quadrupel in the Belgian tradition. This Quad is fragrant, robust and full-bodied, mahogany in color and crowned with a dense, tan, frothy head. Its malt-forward profile yields to a warm finish. 10.2% ABV

Spencer Trappist Oak Aged Imperial Stout -Aged 5 months in Old Weller Antique Bourbon Barrels. Months of oak – barrel aging introduce swirls of bourbon sensations and vanilla notes to the rich, roasted malt – forward character of our Imperial Stout. Zilker La Beer American Pilsner -la Beer provides a familiar American light lager drinking experience, but a cut above your typical macro shelf staples. We used premium German Pilsner Malt and a touch of corn to enhance the typical light lager malt character. The quality German Hallertau Mittelfruh hops have created a subtle floral hop element and the thorough fermentation leads to a dry and crispy finish. la Beer is the ultimate pairing for la Barbecue’s raved about meats. Meanwhile Neutral TerritoryComplex toastiness and malt driven character reflective of farmhouse table bread and biscuits. The hop profile is reserved with early addition hops showcasing bright floral nuance and refined spice. 5.3% ABV

Meanwhile Disco at the Panic Room –  Nobody panic! This Northwest IPA is layered with Mosaic, Comet, El Dorado and Simcoe hops to bring you classic pine and citrus flavors, with a new school touch of pineapple and berries. 6.2%ABV

Bluebonnet Irish Red Ale –  An Irish Red Ale from our friends up in Round Rock!  5.7% ABV

City Orchard Cherry Red Cider–  Cherry Red, part of our Cider Fresca Series, is a hand-crafted semi-dry cider infused with Montmorency cherries grown on the coast of Lake Ontario. Made with a carefully selected blend of Great Lakes heritage and culinary apples, we bring the flavors of the country’s finest orchards to you in this can. 6.5% ABV

Tupps Alpha Drop –  A Double Dry Hopped IPA with Galaxy, Nelson Sauvin, Cryo Citra & Cryo Mosaic. 7% ABV

B-52 Phazed Out Black IPA –  Our classic Black IPA dry hopped with loads of Cascade, Centennial, and Chinook hops which give that old school citrusy and piney character with a roasty backbone we all love. 7.2% ABV
