WhichCraft Beer Store would like to congratulate Jeff Young and Blue Owl Brewing Company on exceeding their fundraising goal in their attempt to map the sour beer microbiome. This project aims to increase our industry’s understanding of sour beer by deciphering the relationship between mixed culture microbes and the acids they produce. This research could eventually increase the diversity of sour beer available to us in Austin and have major implications for the sour beer industry at large. For more information on this exciting project, and to contribute further to this research please visit Blue Owl’s experiment webpage here
